Fried Modak (Fried Sweet Dumplings)

Lord Ganesha likes Modak. So they had been preparing for Ganesha. I am sure, you would like this. Making of these fried modak are much more easy than steamed modk.



Ingredients:
Refined Oil or vanspati ghee- for deep frying- as required

For Cover:
  • Whole wheat flour or Refined flour (maida)- 1 cup
  • Fine semolina (barik rava, suzi)- ½ cup 
  • Salt- a pinch
  • Hot oil/ mohan- 1 tbsp
For Stuffing:
  • Fresh coconut, scrapped- 1 ½ cups
  • Jaggery- 1 ¼ cup
  • Green cardamom powder- 1 tsp 
  • Roasted poppy seeds- 1 tsp (optional)
  • Salt- 1 small pinch

Method:
  • Soak rava in ¼ cup of water in a bowl for 10 minutes. Add wheat flour, salt and mohan/hot oil. Mix well and knead into a stiff dough like puri. Keep a side the dough at least for 1 hr.
  • To make the stuffing, combine coconut and jaggery in non-stick pan and heat over medium heat. Keep stirring for 15 minutes until jaggery is completely melted and the mixture is moist. Stir continuously to prevent burnt this. Add cardamom powder, poppy seeds & salt to it. Cook for a minute. Avoid overcooking else the mixture starts drying out. Now turn off the heat and let the mixture cool.
  • Knead again and make a small balls of dough, roll into small round puris (or desired size). Spoon some stuffing at the center of the bowl. Make small pinches side by side all along the outer surface of the bowl. Gather the periphery at the top and join to form a peak. The pleated shape looks like a whole garlic. Trim off the excess part of the peak. Repeat with the remaining dough.
  • Heat the oil, and deep fry these modak on low to medium heat till they turn light brown color and crisp.

Notes:
  • For a healthier version, use whole wheat flour instead of plain flour. Rawa is used for crispiness.
  • The modaks should be fried immediately. Cover them with a damp cloth in case of delay, to prevent cracking while frying.

तळलेले मोदक
साहित्य:
तळण्यासाठी वनस्पती तूप किंवा रिफाईंड तेल- आवश्यकतेनुसार 

वरच्या पारीसाठी:-
  • गव्हाचं पीठ किंवा मैदा- १ कप  (साधारण २ वाट्या)
  • बारीक रवा- १/२  कप  
  • मीठ- १ चिमुटभर 
  • मोहन- १ टेबलस्पून 
सारणासाठी:-
  • ओले खोबरे, खोवलेले-  १  १/२  कप  (साधारण २ मध्यम आकाराचे नारळ, फक्त पांढरा भाग घ्यावा )
  • गूळ, चिरलेला- १  १/४  कप 
  • वेलची पूड- १ टीस्पून 
  • मीठ- १ छोटी चिमटी 
  • साजुक तूप- १ टीस्पून 

कृती:

  • रवा १० मिनिटे १/४ कप  पाण्यात भिजत घाला. गव्हाचे पीठ चाळून घ्यावे. गव्हाचे पीठ किंवा मैदा मध्ये मीठ घालून मिक्स करावे. मोहन पीठावर सर्वत्र पसरून घालावे व पीठ हाताने चोळून मिक्स करावे. नंतर त्यात भिजवलेला रवा घालावा. जरूरीनुसार पाणी वापरून अगदी घट्ट कणिक मळावे. हे कणिक एक तास झाकून ठेवावे.
  • जाड बुडाच्या पातेल्यात किंव्हा नॉन-स्टिक पॅनमध्ये खवलेल ओलं खोबर, गूळ, खसखस व तूप एकत्र करून मध्यम ते मंद आचेवर १५ मिनिटे शिजववे. सतत हलवत रहावे , करपणार नाही याची काळजी घ्यावी. रंग बदलला आणि जरा घट्ट होऊ लागले कि वेलची पूड टाकून, व्यवस्थित ढवळून गॅस बंद करावा. जास्त शिजवू नये, चिक्कीसारखे घट्ट होईल. याप्रमाणे सारण आधीच तयार करून ठेवावे.
  • भिजलेले कणिक हाताने चांगले मळून घेऊन लाटया कराव्यात. पोळपाटावर पुरीएवढी लाटी लाटावी. हातावर घेऊन कळ्या पाडून त्यात सारण भरावे व कळ्या जोडून मोदकाचे तोंड बंद करावे. असे सर्व मोदक भरून घ्यावेत. 
  • कढईत तेल किंव्हा तूप कडकडीत गरम करावे. मध्यम ते मंद आचेवर सर्व मोदक हलक्या तपकिरी रंगावर तळून घ्यावे. तळताना आवरणावर झार्‍याने तूप किंवा तेल हळूहळू उडवून तळावेत म्हणजे टोकाकडे मोदक कच्चा राहत नाही.

टीप: 
मोदक तळायला वेळ असेल तर ओलसर कापडाने झाकून ठेवावेत नाहीतर तडे जातात.
