Corn Dosa

Enjoy this unusual crispy dosa in your breakfast...




Ingredients:
  • Fresh corn kernels- 2 cups (from 4 corn cobs)
  • Besan (bengal gram flour)- ¼ cup
  • Fine rava- 2 tbsp
  • Green chilli, crushed- 3 to 4
  • Ginger, finely grated- ½ inch
  • Fresh coriander leaves, finely chopped- ¼ cup
  • Cumin powder- 1 tsp
  • Turmeric powder- ¼ tsp
  • Hing- ¼ tsp
  • Salt- to taste
  • Baking soda- a pinch
  • Oil- as required for frying

Method:
  • Blend the sweet corn kernels with little water in a mixer till smooth paste. 
  • Combine the sweet corn mixture with all the remaining ingredients and mix well to make a batter of dropping consistency like dosa batter. Add some water as required.
  • Rest this batter for 15-20 minutes.
  • Heat a non-stick dosa pan and grease it using a little oil.
  • Pour a spoonful of the batter on the pan and move the spoon in a circular motion to make round dosa.
  • Smear a little oil around the edges and cook on a medium flame till the dosa turns light brown in colour from both the sides.
  • Repeat with the remaining batter to make more dosas.
  • Serve hot dosas with mint chutney and tomato ketchup.

कॉर्न डोसा
साहित्य:
  • मक्याचे दाणे- २ कप (४ कणसापासून)
  • बेसन- पाव कप
  • बारीक रवा-२ टेबलस्पून
  • हिरवी मिरची, बारीक कुटून- ३ ते ४
  • आले, बारीक किसून- अर्धा इंच
  • कोथिंबीर, बारीक चिरून- पाव कप
  • जिरेपूड - १ टिस्पून
  • हळद - १/४ टिस्पून
  • हिंग- १/४ टिस्पून
  • मीठ- चवीनुसार 
  • खायचा सोडा- चिमूटभर
  • तेल-  तळण्यासाठी, आवश्यकतेनुसार 

कृती:
  • थोडे पाणी घालून मक्याचे दाणे मिक्सरवर बारीक वाटून घ्यावेत.  
  • मक्याच्या पेस्टमध्ये सर्व उर्वरित साहित्य एकत्र करा व चांगले ढवळा. जरुरीनुसार पाणी घालावे. मिश्रण डोसा पिठासारखे हवे. (थोडी आंबट चव हवी असल्यास पाण्याऐवजी ताक वापरावे.)  
  • १५ ते २० मिनिटे मिश्रण तसेच राहू द्या. 
  • नॉन-स्टिक डोसा पॅन गरम करा आणि थोडे तेल तव्याला लावा.  
  • पॅनवर एक पळीभर मिश्रण घालावे आणि गोलाकर चमचा फिरवून त्याचा डोसा बनवावा. 
  • डोश्याच्या कडेने थोडे तेल सोडावे आणि डोसा दोन्ही बाजूंनी हलका तपकिरी होईपर्यंत मध्यम आचेवर शिजू द्यावा.  अश्याप्रकारे सर्व उर्वरित डोसे करून घ्यावेत. 
  • पुदिना चटणी आणि टोमॅटो केचपबरोबर गरम डोसा सर्व्ह करा.

Corn Upma

Corn Upma is a variation of the original upma recipe. It is a healthy breakfast dish filled with the goodness of corn. This is very popular in Indore (MP).




Ingredients:

  • Corn Cobs/maize (I used sweet corns)- 4 nos. 
  • Green Chillies, chopped- 4 to 5 
  • Ginger, grated or minced- 1 tsp (optional) 
  • Mustard Seeds- 1 tsp 
  • Turmeric Powder- ½ tsp 
  • Hing- ¼ 
  • Curry leaves- 1 string 
  • Oil- 3 to 4 tbsp 
  • Salt- to taste 
  • Fresh Coconut, scraped- as required for garnishing 
  • Coriander leaves, finely chopped- a handful 
  • Lemon wedges- for serving 
  • Nylon Sev- as required for garnishing (Suggestion) 


Method:
1. Grate the corns and set aside. If you using corn kernels, grind them without water into a coarse pulp/paste. 

2. Heat oil in a non-stick pan. Add the mustard seeds and let them splutter.
3. Then add chopped green chillies, curry leaves, grated ginger, turmeric powder, hing and stir for a few seconds.
4. Now add the grated corn and mix.
5. Saute for a while.
6. Add the salt to it and mix well.
7. Cover the pan with a lid and let it cook on a low flame for 10 min.
8. The mixture thickens, reduces and separates from pan edge. It means upama is now done. 

9. Turn off the flame and some chopped coriander and mix well. 
10. Garnish with grated coconut, coriander leaves and lemon wedges. 
11. Serve hot. 

Notes:

  • I used here American sweet corns. But you can use Indian white corns also. American sweet corn are soft and juicy means they contain more moisture. Hence they are easy to cook. Indian white corns are hard, dry and not easy to cook. So you have to use ¼ of milk to cook them. Add milk in the grated corn or paste.
  • Indian white corns are not sweet so you can add pinch of sugar.
मक्याचा उपमा
    साहित्य: 
    • मक्याची कणसे (मी स्वीट कॉर्न वापरले आहेत) - ४ नग
    • हिरव्या मिरच्या, तुकडे करून -४ ते ५ 
    • आले, किसलेले- १ टिस्पून
    • मोहरी -१ टिस्पून 
    • हळद - १/२ टिस्पून 
    • हिंग -१/४ टिस्पून 
    • कढीपत्ता- १ डहाळी 
    • तेल- ३ ते ४ टेबलस्पून  
    • मीठ- चवीनुसार
    • ओले खोबरे,खवलेले - आवश्यकतेनुसार सजावटीसाठी 
    • कोथिंबीर, बारीक चिरून- एक मूठभर
    • लिंबू - आवश्यकतेनुसार 
    • नायलॉन शेव - सजावटीसाठी 

    कृती: 
    • मक्याची कणसे किसून घ्यावीत. दाणे वापरत असल्यास, पाणी न भरड वाटून घ्यावे. फूड प्रोसेसरमध्ये छान भरडता येते. 
    • नॉन -स्टिक कढईत तेल तापवावे. मोहोरी घालून तडतडली की चिरलेली हिरवी मिरची, कढीपत्ता, किसलेले आले, हळद, हिंग घालून फोडणी करावी.  
    • मक्याचा किस घालून परतावा. त्यात मीठ घालून चांगले मिक्स करावे. मीठ बेतानेच घालावे.  कारण कीस नंतर आळतो.  
    • झाकण ठेवून १० मिनिटे  मंद आचेवर शिजू द्यावे. 
    • मिश्रण घट्ट होईल आणि पॅनच्या कडेने सुटू लागेल. याचा अर्थ उपमा शिजला आहे.  
    • बारीक चिरलेली कोथिंबीर घालून चांगले मिक्स करा. झाकून ठेवा.  
    •  गॅस बंद करा.  
    • ओले खोबरे आणि कोथिंबीर पेरून लिंबाच्या फोडी सोबत गरमागरम वाढा. 

    टिपा: 
    • मी इथे अमेरिकन स्वीट कॉर्न वापरले आहेत. पण आपण भारतीय पांढरा कॉर्न वापरू शकता. 
    • अमेरिकन स्वीट कॉर्न मऊ व रसाळ असतात. म्हणजे त्यात पाण्याचा अंश जास्त असतो. त्यामुळे ते शिजायला सोपे असतात. 
    • भारतीय पांढरे कॉर्न कडक आणि कोरडे असतात त्यामुळे शिजायला सोपे नसतात. म्हणून त्यांना शिजवण्यासाठी १/४ कप  दूध वापरावे. 
    • भारतीय पांढरे मके अगोड असतात त्यामुळे आपण चिमूटभर साखर घालू शकता.

      Mathri

      Mathari is popular Punjabi snack. But we can make this for change instead of Masala Puri in Diwali.





      Ingredients:

      • All purpose flour (maida)- 2 cups 
      • Vanaspati ghee (dalada) or Refind sunflower oil- ½ cup 
      • Cumin, coarsely crushed- ½ tsp 
      • Black pepper corns, coarsely crushed - 1 tsp 
      • Kalonji (Onion seeds)- 1 tsp 
      • Salt to taste 
      • Sunflower oil to deep fry- as required 

      Method:

      • Sieve the flour. 
      • In a big mixing bowl, combine all the ingredients very well. 
      • Heat ghee in a small pan until it reaches the smoking stage. (mohan) 
      • Pour hot ghee over the mixture. 
      • Cool little bit and rub this flour with palms. (like shortcrust pastry) 
      • Make a very firm dough by adding a small amount of water at a time. (add only a tbsp at a time.) 
      • Cover the dough and keep aside for 15-20 minutes, till it sets. 
      • Knead again nicely and roll the dough into thick ropes. Then divide the dough into small balls. 
      • Roll approx 2 inch diameter thick puri. You can make them as small strips. 
      • Prick these puries with fork. (This stops them from fluffing up during the frying) 
      • Heat sufficient oil in a wok/kadhai. Fry them low to med heat. (If fried in a hot oil, matharies will get soft like Poories.) Fry them in small batches, until nicely golden brown, not too dark. 
      • Serve hot with your evening tea. Punjabi are served with mango pickle. 

      मठरी
      साहित्य:
      • मैदा- २ कप
      • वनस्पती तूप (डालडा) किंवा रिफाइंड सुर्यफुल तेल- १/२ कप
      • जीरे, जाडसर कुटून-१/२ टीस्पून
      • काळे मीरे, जाडसर कुटून-१ टीस्पून 
      • कलौन्जी (कांद्याचे बी)- १ टीस्पून 
      • मीठ- चवीप्रमाणे
      • तेल- तळण्यासाठी आवश्यकतेनुसार

      कृती:
      • मैदा चाळून घ्यावा.
      • त्यात सर्व मसाले आणि मीठ घालावे.
      • तूप/तेल कडकडीत तापऊन त्याचे मोहन वरील मिश्रणात घालावे.
      • थोडस थंड झाल्यावर हाताने हळूहळू चोळून तूप मैद्यात सारखे मिसळून एकजीव करावे.
      • मग लागेल तसे थोडे थोडे पाणी टाकून मैदा घट्ट भिजऊन घ्यावा.
      • थोडा वेळ तसाच झाकून ठेवावा.
      • नंतर पुन्हा चांगले मळून घेऊन त्याच्या छोट्या लाट्या कराव्यात.
      • जाडसर पुऱ्या लाटून घ्याव्यात व काट्याने त्यावर टोचे मारावेत. (नाहीतर पुरीसारख्या फुगतील आणि नंतर मऊ होतील.) लांबडे आयताकृती तुकडे पण करता येतील.
      • तेल तापून घ्या. थोड्या थोड्या पुऱ्या मंद ते मध्यम आचेवर सोनेरी रंगावर तळा. तरच त्या खुसखुशीत होतील. 
      • थंड झाल्यावर हवाबंद डब्यात ठेवा.

      Valache Birde / Bhirde (Sprouted Val or Field Beans Curry)

      Valache Birde/Bhirde or Birda is a classic Maharashtrian curry. It is most popular in our ‘Kokan’ (western coastal region of Maharashtra). Any single festival meal is not complete without "Valacle Birde". This curry is most important part of our "Naivedyam" thali.

      Sprouted and peeled beans/pulses like val (field beans), mung (green gram), chavali (lobia) called "birde" in Marathi, and this birde curry is called as "birde" itself.

      This curry really brings back the taste of home! This is my all time favorite curry ……so let's do start.

      Preparation: You need....Dried Val beans - 1 cup

      Ingredients:

      • Sprouted and peeled Val beans (birde) - around 2 cups (from 1 cup of dried Val beans) 
      • Fresh coconut, scraped or grated- ½ cup 
      • Cumin seeds-½ tsp 
      • Garlic- 5 to 6 cloves 
      • Onion, chopped- 1 med 
      • Turmeric powder – ½ tsp 
      • Mustard seeds- ½ tsp 
      • Asafetida (Hing)- ½ tsp 
      • Homemade mix masala or Malwani masala– 4 to 5 tsp (or Red chilli powder- 2½ tsp + Goda masala- 2 tsp) 
      • Kokam petals -3 to 4 or Tamarind pulp-1 tsp 
      • Jaggery (gur),grated- ½ to 1 tsp (as per your like) 
      • Salt- as per taste 
      • Veg. oil- 4 to 5 tbsp 
      • Fresh coriander- 2 tbsp (for garnishing) 

      Method:

      • Grind together fresh coconut, cumin seeds and garlic with some water. (Add hot water if you are using frozen coconut.) Grind into fine paste. 
      • Wash these sprouted & peeled val beans and drain. 
      • Heat oil in a kadai or pan. Add mustard seeds for tempering. When mustard seeds are popping, add onion. Sauté till turns pinkish. 
      • Add hing, turmeric powder and masala or chilli powder. Sauté for few seconds. 
      • Add val beans and saute for a while and add water. Mix well and cover the wok with s.s. plate. Pour some water on a plate. Cook for 5 minutes on low heat. 
      • Add coconut paste and salt. Add some water (adjust the consistency of curry as per personal choice). 
      • Mix well and cook for 20-25 on low heat or till the beans become tender (not too soft). Stir occasionally with a soft hand. Check in between by pressing one with fingers. 
      • Add kokam petals or tamarind pulp, jaggery and water if needed. (If you are using goda masala, add now.) Cook another 5 minutes on low heat. 
      • Garnish with coriander. Serve hot with chapatti or bhakari or rice.


      Second Method: (Traditional old Kokani recipe of my granny. C.K.P. community also follow this recipe. )
      • In a big pan/wok, combine peeled val,turmeric powder, hing, masala or chilli powder, chopped onion, oil, salt and water. 
      • Mix well and cover the wok with s.s. plate. Pour some water on a plate. Cook for 5 minutes on low heat. 
      • Add coconut paste, required water and again mix it thoroughly. Cook on low heat for 20 to 25 minutes or till the beans become tender. 
      • Add kokam petals or tamarind pulp, jaggery and water if needed. (If you are using goda masala, add now.) Cook another 5 minutes on low heat. 
      • Garnish it with coriander. 

      Tips:

      • Val kernels are very delicate so handle and mix it with soft hand otherwise kernels breaks. Do not overcook. Remember that do not cook soft like smashed dal, val kernels should stay whole. 
      • Due to over cooking of val beans, the taste would ruin and partially cooked val beans are difficult to digest. Experience gives you perfection. 
      • Eating more amount of val beans, you may suffer from acidity and gas trouble. 
      • Some people use potato in this curry. But in my opinion potato ruins taste of curry.

      Malwani Style Dry Mutton Curry (Mutton Sukka or Mutton Sukka Fry)

      Mutton sukka is a dry spicy mutton preparation with quite an easy recipe. This traditional Kokani dish is very tasty, totally addictive and good combination with hot rice roti/bhakari.




      Ingredients:

      • Mutton, washed and cubed- ½ kg 
      • Turmeric powder- ½ tsp 
      • Asafetida (Hing) - ½ tsp 
      • Ginger- garlic paste- 2 tsp (use homemade paste, ready-made paste contains vinegar) 
      • Onion,chopped- 1 cup 
      • Homemade Masala/ Malwani masala/ Sunday Masala- 4 to 5 tsp 
      • Garam masala- 2 tsp 
      • Dry Coconut paste- 2 to 3 tbsp 
      • Bay leaf- 3 to 4 
      • Cinnamon stick- 1 inch piece 
      • Oil- 6 tbsp 

      Method :
      • Marinate the mutton with ginger-garlic paste, turmeric powder, hing and salt for minimum 30 minutes. 
      • Heat the oil in big wok , add bay leafs, cinnamon and onion, saute till translucent. 
      • Add the marinated mutton and saute on high flame for 5 minutes. 
      • Add some water about ¼ cup. Cover the wok with s.s. plate. Pour some water on a plate. Cook mutton for 15-20 minutes on medium heat. Or you can use pressure cooker or pressure pan. (Do not cook completely, cook just 75 %) 
      • Now add homemade masala or malwani masala and coconut paste. Cook on low to med heat for 20 to 25 minutes or till cooked. Stir occasionally. 
      • Fry/saute on high heat for 2-3 minutes. Thus mutton curry become dry. 
      • Serve hot with chapati, bhakari, ghavana or amboli.

      Tips:

      • Use sp. this garam masala for getting original taste. (Click on garam masala). 
      • You may use (chili powder + garam masala) instead of malwani masala. 
      • You can prepare chicken curry with same ingredients and method. But remember that chicken need less time to cook.
      मालवणी सुक्क मटण 
      साहित्य:
      • मटण - १/२  किलो
      • आल-लसुण पेस्ट - २ टीस्पून 
      • हळद- १ टीस्पून 
      • हिंग- १/२ टीस्पून 
      • कांदा, बारीक चिरुन- १ मोठा 
      • घरगुती मसाला किंव्हा मालवणी मसाला - ४ ते ६ टीस्पून  (आवडीनूसार कमी जास्त वापरा, मी ५ टीस्पून वापरला आहे ) 
      • गरम मसाला- २ टीस्पून
      • तेल- ६ टे.स्पून 
      • दालचिनी- १ इंचाचा तुकडा 
      • तमालपत्र- ३
      • भाजलेल्या सुक्या खोबऱ्याचे वाटण- २ ते ३ टेबलस्पून 
      • मीठ - चवीनुसार 
      कृती:
      • मटण स्वच्छ धुउन आणि कापून घ्या. मटणाला हळद, हिंग, आल-लसूण पेस्ट आणि मीठ लाऊन व्यवस्थित चोळा. कमीतकमी अर्धा तास मुरत ठेवा. 
      • कढई मध्ये तेल गरम करुन त्यात दालचिनी, तमालपत्र आणि कांदा टाकून गुलाबी होइस तो पर्यंत परता. 
      • आता मटन घालुन चांगले ५ मिनिटे मोठ्या आचेवर खमंग परता. 
      • मटणात थोडेसे पाणी टाकून व्यवस्थित हलून घ्या. 
      • झाकणावर पाणी ठेऊन मध्यम आचेवर १५- २० मिनिटे शिजू द्या. मधेमधे हलवत रहा. मटण पूर्णपणे शिजऊ नका, साधारणपणे ७५% शिजले पाहिजे.  (प्रेशर कुकरचा वापर केला तरी चालेल.)
      • मग मालवणी मसाला, गरम मसाला आणि वाटण टाकून व्यवस्थित हलून घ्या. २० ते २५ मिनिट किंव्हा मटण शिजेपर्यंत मंद आचेवर झाकण लाऊन शिजवुन घ्या.
      • नंतर मोठ्या आचेवर २-३ मिनिटे परतून घ्या. म्हणजे मटण छान फ्राय होऊन सुक्क होईल. 
      • गरमागरम भाकरी, चपाती, आंबोळी किंव्हा वड्यासोबत वाढा. 
      टिप:
      • हे मटन कुकरमध्ये पण शिजवता येईल. पण बाहेर केलेल्या मटणाची चव काही न्यारीच असते. 
      • ह्या पद्धतीने कोंबडी पण शिजवता येईल. पण लक्ष्यात ठेवा, कोंबडी शिजायला कमी वेळ लागतो. 
      • खास मालवणी चवीसाठी हाच गरम मसाला (इथे क्लिक करा) वापरा.

      Rava Coconut Laddu

      A traditional Maharashtrian Rava laddu with Konkani touch...........


      Ingredients: 
      • Fine semolina (mahin rava)- 1 cup 
      • Freshly scraped coconut- 1 cup (Use only white part of the scraped coconut. ) 
      • Sugar- ¾ to 1 cup 
      • Water- ½ cup 
      • Golden raisins (kismis)- 1 tbsp 
      • Buchanania lanzan (charoli/chironji)- 1 tbsp
      • Mix small chunks of Almonds, Cashew and Pistachio- 1 tbsp (optional) 
      • Cardamom (elaichi) powder- ½ tsp 
      • Pure ghee- ¼ cup 

      Method:
      • Heat ghee in a kadhai and add rava. Roast rava till color turns to pink and it releases an appetizing smell. 
      • Add grated coconut in rava mixture and roast over low-medium heat for 3 to 4 minutes. 
      • Add all dry fruits in it and saute for awhile. Remove it from the heat. 
      • Combine the sugar with water in another deep pan, mix well and cook till the sugar dissolves completely. It takes 3-4 minutes to become perfect one string sugar syrup. 
      • Switch off the gas. Now add rava mixture and cardamom powder into sugar syrup, mix well. Stir continuously to avoid lumps. 
      • After half an hr, the mixture becomes thick. 
      • Roll them into round balls. 
      • Cool and store in an air-tight container. 
      Tip: Fresh coconut has a short life, so consume this laddu as soon as possible or store in refrigerator.

      पाकातले रवा-खोबरे लाडू (नारळीपाकाचे लाडू)

      साहित्य:
      • बारीक रवा- १ कप
      • ओले खवलेले खोबरे- १ कप  
      • पाणी- १/२ कप 
      • साखर- ३/४ कप ते १ कप 
      • साजूक तूप- १/४  कप 
      • वेलची पूड- १/२ टीस्पून 
      • चारोळ्या- १ टेबलस्पून 
      • मनुका/बेदाणे- १ टेबलस्पून 
      • बदाम,काजू,पिस्ता यांचे काप- १ टेबलस्पून (ऐच्छिक)
      कृती:
      • रवा मंद ते मध्यम आचेवर तूपावर खमंग, गुलाबी रंगावर भाजून घ्यावा. रवा चांगला फुलाला पाहिजे नाहीतर लाडू कच्चट लागतात. 
      • त्यात खोबरे टाकून अजून ४-५ मिनिटे मंद ते मध्यम आचेवर भाजून घ्यावे. 
      • रवा-खोबरे भाजून झाले की त्यात सर्व ड्राय फ्रुट्स घालावेत व अजून थोडावेळ परतावे.  
      • पातेल्यात साखर आणि पाणी एकत्र करून उकळावे. साखर वितळली की ३-४ मिनिटात पाक (एकतारी  पाक हवा) तयार होतो.  
      • गॅस बंद करून त्यात रवा व वेलची पूड घालावी.
      • मिश्रण घट्ट होईपर्यंत सतत ढवळत रहावे. त्यामुळे गुठळ्या होणार नाहीत.  
      • २-३ तासांनी मिश्रण आळून लाडू वळण्याजोगे होईल. मग लाडू वळावेत. 
      • लाडू जास्त दिवस ठेऊ नयेत. ओल्या खोबऱ्यामुळे लाडू लवकर खराब होतात.  ५-६ दिवसांपेक्षा जास्त राहिले तर फ्रीज मध्ये ठेवावेत.
