Wild Vegetable Dinde

Dinde or Dinda is wild vegetable and available in only monsoon. May be it is known by other names in India. I gave some recipes here for this vegetable. 

Introduction: 
This vegetable is nothing but stems of small plant.

  # Method 1 (Vegetarian: with val beans)


Ingredients:

  • Dinde- 1 bunch (approx 5 stems)
  • Sprouted and peeled val beans (field beans)- ½ cup
  • Chopped onion-  ½ cup
  • Garlic, bruised- 6 cloves
  • Mustard seeds -  1 tsp
  • Cumin seeds- ½ tsp
  • Asafetida (Hing) - ¼ tsp
  • Turmeric powder- ½ tsp
  • Homemade masala - 2 tsp or (1 tsp Chili powder +1 tsp Goda masala)
  • Grated jaggery- ¼ tsp (optional)
  • Kokum/Aamsul- 2
  • Salt- to taste
  • Oil- 3 tbsp
  • Fresh coconut, scraped- 2 tbsp 
  • Fresh coriander, finely chopped- 2 tbsp

Method:

  • Peel outer thick and rough skin of stems. Remove threads if any. Peel as like drumsticks. you well get white and soft inner part of stems. They are sticky. 
  • Chop these steams and wash. You will get about 1¼ cup vegetable. 
  • Heat oil in a pan. Add mustard seeds. When the splattering starts, add cumin seeds garlic and onion. 
  • When onion become pink, add turmeric powder, hing, masala and sauté for a while. 
  • Add val beans, little water and salt to taste. Mix well, cover and cook for 7-8 minutes on low heat. 
  • Add chopped steams and sprinkle some water. Mix well, cover and cook for 15 minutes or till cooked on low heat. Stir occasionally. 
  • Add jaggery kokum, coconut and coriander. Mix well, cover and cook for a minute on low heat.
  • Garnish with some scrapped coconut and coriander. 
  • Serve hot with chapati, bhakari or dal-rice.

# Method 2 (Vegetarian: with chana dal)

Ingredients:
  • Dinde- 1 bunch (approx 5 stems)
  • Chana dal (Split bengal gram)- 2 tbsp
  • Chopped onion-  ½ cup
  • Garlic, bruised- 6 cloves
  • Mustard seeds -  1 tsp
  • Asafetida (Hing) - ¼ tsp
  • Turmeric powder- ½ tsp
  • Homemade masala - 2 tsp or (1 tsp Chili powder +1 tsp Garam masala)
  • Salt- to taste
  • Oil- 3 tbsp
  • Fresh coconut, scraped- 2 tbsp (optional)
  • Fresh coriander, finely chopped- 2 tbsp

Method:

  • Soak chana dal in water for min 2 hours.
  • Peel outer thick and rough skin of stems. Remove threads if any. Peel as like drumsticks. you well get white and soft inner part of stems. They are sticky.
  • Chop these steams and wash. You will get about 1¼ cup vegetable.
  • Heat oil in a pan. Add mustard seeds. When the splattering starts, add garlic and onion. 
  • When onion become pink, add turmeric powder, hing, masala and sauté for a while. 
  • Add chana dal, little water and salt to taste. Mix well, cover and cook for 7-8 minutes on low heat.
  • Add chopped steams and sprinkle some water. Mix well, cover and cook for 15 minutes or till cooked on low heat. Stir occasionally. 
  • Garnish with some scrapped coconut and coriander. 
  • Serve hot with chapati, bhakari or dal-rice.

# Method 3 (Non-Vegetarian: with small prawns)

Ingredients:
  • Dinde- 1 bunch (approx 5 stems)
  • Small prawns, shelled & devained- ½ cup
  • Chopped onion-  ½ cup
  • Ginger~garlic paste- 2 tsp
  • Asafetida (Hing) - ¼ tsp
  • Turmeric powder- ½ tsp
  • Homemade masala  or Malwani masala- 2 tsp 
  • Kokum/Aamsul- 3
  • Salt- to taste
  • Oil- 3 tbsp
  • Fresh coriander, finely chopped- 2 tbsp

Method:
  • Peel, devaine and wash prawns. Marinate prawns with ginger-garlic paste, salt and a pinch turmeric for 1 hour.
  • Peel outer thick and rough skin of stems. Remove threads if any. Peel as like drumsticks. you well get white and soft inner part of stems. They are sticky.
  • Chop these steams and wash. You will get about 1¼ cup vegetable.
  • Heat oil in a pan and add onion. When onion become pink, add turmeric powder, hing, masala and sauté for a while. 
  • Add chopped steams and sprinkle some water. Mix well, cover and cook for 10-12 minutes on low heat. Stir occasionally. 
  • Add marinated prawns and chopped coriander, mix well. Cover and cook for 5-7 minutes.
  • Garnish with some coriander. 
  • Serve hot with chapati, bhakari or dal-rice.


दिंड्याची भाजी


दिंडे किंवा दिंडा या नावाने हि रानभाजी रायगड जिल्ह्यात ओळखली जाते.  इतर भागात या भाजीची नावे वेगळी असू शकतात.
हि भाजी म्हणजे पावसात उगवणाऱ्या एका वनस्पतीची देठ असतात. यातही दोन प्रकार येतात. काही दिंड्यांची देठ हिरवी तर काहींची लाल असतात.
हि भाजी फक्त पावसाळ्यातच मिळते. इतर पावसाळी भाज्यांप्रमाणे हि चविष्ट असते. हि भाजी शाकाहारी  व मांसाहारी ह्या दोन्ही प्रकारात करता येते.

साहित्य:
  • दिंडे - १ जुडी (साधारणपणे ५ देठ )
  • मोड आणून सोललेले वाल-  १/२  कप
  • चिरलेला कांदा- १/२ कप
  • ठेचलेल्या  लसूण पाकळ्या - ६
  • राई/ मोहरी- १ टीस्पून
  • जिरे- १/२ टीस्पून
  • हिंग- १/४ टीस्पून
  • हळद- १/२ टीस्पून
  • घरगुती मसाला - २ टीस्पून (किंव्हा मिरची पूड- १ टीस्पून+गोडा मसाला- १ टीस्पून)
  • गूळ- १/४ टीस्पून
  • कोकम/आमसूल- २
  • मीठ चवीनुसार
  • तेल- ३ टेबलस्पून
  • बारीक चिरलेली कोथिंबीर- २ टेबलस्पून
  • खवलेले ओले खोबरे- २ टेबलस्पून
कृती:
  • दिंड्याची देठ शेवग्याच्या शेंगांप्रमाणे आतील मऊ, पांढरा भाग दिसेपर्यंत सोला. काही दोरे असतील तर काढून टाका.    
  • नंतर चिरून व धुऊन घ्या. साधारणपणे १ १/४ कप एवढी भाजी मिळेल.  
  • एका कढईत तेल गरम करून मोहरी टाका, मोहरी तडतडली कि जिरे, लसुण, कांदा टाका. कांदा गुलाबी झाला कि त्यात हळद, हिंग आणि मसाला टाका. जरासे परता.  
  • त्यात सोललेले वाल व थोडे पाणी टाका. झाकण ठेऊन मंद आचेवर ५-७ मिनिटे शिजू द्या.  
  • नंतर त्यात चिरलेली भाजी व मीठ टाका.  व्यवस्थित एकत्र करून घ्या.
  • त्यात थोडे पाणी शिंपडा. झाकण ठेऊन मंद आचेवर १० ते १५ मिनिटे किंव्हा भाजी शिजेपर्यंत  शिजू द्या. 
  • नंतर गुळ, कोकम, कोथिंबीर व ओलं खोबर टाकून एक वाफ काढा. 
  • वरून कोथिंबीर व ओलं खोबर पेरा.  गरमागरम भाकरी किंव्हा चपाती किंव्हा आमटी-भातासोबत वाढा.

# पध्दत २ (डाळ  घालून)
साहित्य:
  • दिंडे - १ जुडी (साधारणपणे ५ देठ )
  • चणा डाळ -  २ टेबलस्पून 
  • चिरलेला कांदा- २ कप
  • ठेचलेला लसूण पाकळ्या - ७ ते ८
  • राई/ मोहरी- १ टीस्पून
  • हिंग- १/४ टीस्पून
  • हळद- १/२ टीस्पून
  • घरगुती मसाला किंवा मालवणी मसाला - २ टीस्पून (किंव्हा मिरची पूड- १ टीस्पून+ गरम  मसाला- १ टीस्पून)
  • मीठ चवीनुसार
  • तेल- ३ टेबलस्पून
  • बारीक चिरलेली कोथिंबीर- २ टेबलस्पून
कृती:
  • चणा डाळ धुवून २ तास भिजत ठेवा.  
  • दिंड्याची देठ शेवग्याच्या शेंगांप्रमाणे आतील मऊ, पांढरा भाग दिसेपर्यंत सोला. काही दोरे असतील तर काढून टाका.

  • त्यात थोडे पाणी शिंपडा. झाकण ठेऊन मंद आचेवर १० ते १५ मिनिटे किंव्हा भाजी शिजेपर्यंत  शिजू द्या. 
  • वरून कोथिंबीर पेरा.  गरमागरम भाकरी किंव्हा चपाती किंव्हा आमटी-भातासोबत वाढा.

# पध्दत ३ (कोलंबी  घालून)
साहित्य:
  • दिंडे - १ जुडी (साधारणपणे ५ देठ )
  • सोललेली कोलंबी -  १/२  कप
  • चिरलेला कांदा- १/२ कप
  • आले-लसूण पेस्ट- २ टीस्पून
  • हिंग- १/४ टीस्पून
  • हळद- १/२ टीस्पून
  • घरगुती मसाला किंवा मालवणी मसाला- २ टीस्पून 
  • कोकम/आमसूल- ३
  • मीठ चवीनुसार
  • तेल- ३ टेबलस्पून
  • बारीक चिरलेली कोथिंबीर- २ टेबलस्पून
कृती:
  • कोलंबी सोलून त्यातील मधला काळा दोरा काढा व धुवून घ्या. कोलंबीला आल-लसुन पेस्ट, हळद व मीठ चोळून १ तास मुरत ठेवा.    
  • दिंड्याची देठ शेवग्याच्या शेंगांप्रमाणे आतील मऊ, पांढरा भाग दिसेपर्यंत सोला. काही दोरे असतील तर काढून टाका.    
  • नंतर चिरून व धुऊन घ्या. साधारणपणे १ १/४ कप एवढी भाजी मिळेल.  
  • एका कढईत तेल गरम करून त्यात कांदा टाका. कांदा गुलाबी झाला कि त्यात हळद, हिंग आणि मसाला टाका. जरासे परता.  
  • नंतर त्यात चिरलेली भाजी व मीठ टाका.  व्यवस्थित एकत्र करून घ्या.
  • त्यात थोडे पाणी शिंपडा. झाकण ठेऊन मंद आचेवर १० ते १२ मिनिटे शिजू द्या. 
  • त्यात कोलंबी टाकुन मिक्स करा. झाकण ठेऊन मंद आचेवर ५-७ मिनिटे शिजू द्या. 
  • वरून कोथिंबीर पेरा.  गरमागरम भाकरी किंव्हा चपाती किंव्हा आमटी-भातासोबत वाढा.

Paneer Pakoda ~ Cottage Cheese Fritters

Simple but tasty, easy to made, my all time favourite snack......



Ingredients:
  • Paneer (Cottage cheese)- 150 gm 
  • Green paste- 2 tsp
  • Red chili powder- ½ tsp + ½ tsp
  • Cumin powder- ½ tsp
  • Turmeric powder- ½ tsp
  • Carom seeds (Ajwain), crushed- ½ tsp
  • Asafetida (Hing)- ¼ tsp (optional)
  • Soda bicarbonate (baking soda)- a pinch
  • Salt- to taste
  • Gram flour (besan)- ¾ cup
  • Water- ½ cup
  • Oil- as required 

Green paste: Grind all ingredients (garlic-5 cloves, 1 inch of ginger piece, 3 to 4 green chilies, a handful of fresh coriander, some mint leaves, salt) into smooth paste.

Method:
  • Cut cottage cheese into approx half inch sized cubes. (I like to keep this small bite size. Thus paneer marinate well. Pakoda requires less oil to fry and less time to fry.) 
  • Marinate paneer cubes with  ½ tsp chili powder, cumin powder, green paste and salt to taste for 1 to 2 hours.
  • Heat a sufficient oil in a wok/kadhai. 
  • Meanwhile, combine gram flour, ½ tsp red chili powder, turmeric powder, hing, carom seeds, baking soda and salt in one bowl. Add water gradually and whisk well to make a batter of a coating consistency. 
  • Add 1 tsp hot oil/mohan in the batter and mix well.
  •  Dip each paneer cube into the batter and deep fry on low to medium heat till golden brown. 
  • Serve hot with a mint chutney and tamarind chutney

Kolambiche Lipte ~ Konkani Style Prawns Masala

Lipate means thick curry. A tasty and quick prawns curry goes well with almost every thing. We also called it "kandyatali kolambi".

Ingredients:
  • Shrimp/prawns, shelled & deveined- ½ to ¾ cup 
  • Onion, finely chopped- 2 med (approx 1 cup)
  • Tomato, finely chopped- 2 med (approx 1 cup)
  • Green chili- 1 to 2
  • Turmeric powder- ½ tsp
  • Asafoetida (Hing)- ¼ tsp
  • Homemade mix masala or Malwani masala or Sunday masala- 2 tsp
  • Ginger~garlic paste- 1½ tbsp
  • Kokum/ Aamsul- 2 petals or Tamarind pulp- 1 tsp 
  • Oil- 4 tbsp
  • Salt- to taste
  • Fresh coriander, finely chopped- a handful 

Method:
  • Clean, peel and devein prawns. I used medium sized prawns but small prawn tastes more better.
  • Marinate them with salt, turmeric powder, mix masala and ginger-garlic paste for at least ½ hour.
  • Heat oil in a pan. Add onion and sauté till become pink, add hing and mix well.
  • Add chilli, tomatoes and little salt. Sauté till it's become soft and discharge oil to side of the pan.
  • Add marinated prawns and sauté a while. Sprinkle little water on it and mix well.
  • Add kokum and some chopped coriander. Give a nice stir.
  • Cover with lid and cook for 6-8 minutes. Stir in between. Do not overcook.
  • Curry discharge oil to side of the pan. It means prawns masala is ready to serve.
  • Garnish with remaining chopped coriander.
  • Serve with rice roti/bhakari or chapati or even bread.

Chicken Popcorn

Homemade chicken popcorn tastes better than the KFC.




Ingredients: 

  • Boneless chicken-  250 gm
  • Corn flour- 1 tsp
  • Egg- 1
  • Garlic powder- ½ tsp or garlic paste- 1 tsp
  • Onion powder- ½ tsp or onion paste- 1 tsp
  • Chili powder or cayenne pepper- 2 tsp
  • Mixed herbs- ½ tsp
  • Black pepper powder- 1 tsp or to taste
  • Worcestershire sauce or lime juice- 1 tsp
  • Salt- to taste
  • Raw corn flakes (makai poha), coarsely ground- 2 cups
  • Oil for deep frying 

Method:
  • Wash and cut chicken into bite-sized chunks.
  • Combine garlic powder, onion powder, chili powder, mixed herbs, black pepper powder, worcestershire sauce and salt in a bowl. Mix well and add chicken pieces in it. 
  • Mix and marinate the chicken for minimum 2 hours.
  • Add the egg white and corn flour. Mix everything well . 
  • Heat oil in the kadhai and take ground  raw corn flakes in a dish.
  • Roll and coat each chicken piece in ground corn flakes.
  • Deep fry each chicken piece until evenly golden brown.
  • Drain popcorn chicken on a tissue paper.
  • Serve hot with tomato ketchup and some salad.

Tips:

  • You can use bread crumbs or crumbled corn flakes or coarsely powdered oats instead of  raw corn flakes.
  • For Indian flevour, omit onion & garlic powder, pepper powder, worcestershire sauce and mixed herbs. Add tikka masala, ginger-garlic paste and lime juice. 
  • Carefully put pieces into hot oil and fry until evenly golden brown. Be careful not to over-crowd your pan or the chicken will not have a crispy crust. 
  • Raw corn flakes (makai poha) : 

चिकन पॉपकॉर्न्स

साहित्य:
  • बोनलेस चिकन- २५० ग्रॅम
  • कॉर्न फ़्लोवर- १ टीस्पून 
  • अंड - १
  • लसूण पावडर- १/२  टिस्पून किंवा लसूण पेस्ट- १ टीस्पून 
  • कांदा पावडर- १/२  टिस्पून किंवा कांदा पेस्ट- १ टीस्पून 
  • मिरची पावडर- २ टिस्पून किव्हा आवडीनुसार 
  • मिक्स हर्ब्स- १/२  टिस्पून
  • मिरपूड- १ टीस्पून  किंवा चवीनुसार
  • Worcestershire सॉस किंवा लिंबाचा रस- १ टिस्पून
  • मीठ- चवीनुसार 
  • मक्याचे पोहे (चिवड्यासाठी वापरतात ते), भरड चुरा करून - २ कप
  • तळण्यासाठी तेल- आवश्यकतेनुसार 

कृती:
  • चिकन धुवून त्याचे छोट्या आकाराचे तुकडे करा.  
  • एक वाडग्यात  लसूण व कांदा पावडर, मिरची पावडर, मिक्स  हर्ब्स , मिरपूड, Worcestershire सॉस आणि मीठ एकत्र करा. 
  • मिश्रण चांगले मिक्स करून त्यात चिकनचे तुकडे घालावे. चिकनच्या तुकड्यांना मिश्रण व्यवथित चोळावे आणि किमान २ तास चिकन मुरु द्यावे. 
  • नंतर त्यात अंड्याचा पांढरा भाग व कॉर्न फ्लोअर घालावे. सर्व काही चांगले मिक्स करावे.
  • एका कढईत तेल गरम करायला ठेवा.  
  • एका डिशमध्ये मक्याच्या पोह्यांचा चुरा घ्या. एकएक चिकन तुकडा त्यात घोळवा.  बाजूने तो चुरा चिकनला चिकटला पाहिजे. 
  • अश्या प्रकारे सर्व चिकनचे तुकडे सोनेरी-तपकिरी होईपर्यंत तळून घ्यावेत. टिशू पेपरवर काढावेत.  
  • गरमागरम चिकन पॉपकॉर्न्स टोमॅटो केचप आणि सलाड सोबत सर्व्ह करावे.  

टिपा:
  • मक्याच्या पोह्यांचा चुऱ्याच्याऐवजी  ब्रेडक्रम्ब्स किंवा कॉर्न  फ्लेक्सचा चुरा वापरू शकता.
  • हेच चिकन पॉपकॉर्न्स भारतीय चवीत बनवायचे  असतील तर वर नमूद केलेले मसाले वापरण्याऐवजी  टिक्का मसाला, आलं-लसूण पेस्ट आणि लिंबाचा रस घाला.

Spinach in Buttermilk Curry (Takatala Palak)

A traditional recipe of spinach and other leafy vegetables. My granny used to make it. I love this with steamy rice. This curry also known as "Palak Kadhi" and "Takatala Palak" in Marathi.

Ingredients:

  • Spinach- 1 medium bunch (you can use fenugreek or chakvat) 
  • Buttermilk- 2 cups
  • Peanuts- ¼ cup
  • Split bengal gram (chana dal)- 1 tbsp
  • Bengal gram flour (besan)- 2 tbsp
  • Green chilies, finely chopped- 2 to 4
  • Oil or pure ghee- 2 tbsp
  • Cumin Seeds- ½ tsp
  • Turmeric powder- ½ tspAsafetida (Hing)- ¼ tsp
  • Dry red chilies, torn- 2 (I used 5 small "Bor" chilies)
  • Sugar- a pinch
  • Salt to taste

Method:

  • Wash peanuts and chana dal. Soak them for 2 hours. 
  • Wash and finely chop spinach leaves. 
  • Combine chopped spinach and chilles along with some water in cooker separator .
  • Put peanuts and chana dal in other separator or in small bowl.
  • Put both separators in pressure cooker and cook till 2 to 3 whistles given out.
  • Once the pressure is released, whisk till the spinach is almost mashed. Add besan and whisk again.
  • Add some water in spinach mixture and boil it. Keep stirring continuously until curry starts boiling.
  • Once it is boiled, add buttermilk, salt and sugar. Keep stirring continuously until curry starts boiling. (If you stop stirring, curry become curdle or separate.)
  • Meanwhile heat ghee or oil in a small pan. Add cumin seeds, red chills, turmeric powder and hing. Mix it and add cooked peanuts & chana dal. Mix well and saute for a minute.
  • Add this tempring or tadka in boiling curry. 
  • Give a quick stir and cover this curry with a lid. Switch off the gas. 
  • After 5 minutes, give a nice stir to curry. Now it is ready for serve.
  • Serve hot with chapatti or steamy rice.

Tips:

  • Buttermilk should be thick and sour.
  • If buttermilk has less sourness, add little tamarind pulp in the curry.

Sandwich with Sauteed Veggies

A tasty and long lasting sandwich, suitable for travelling. Usually sandwiches become soggy but these sandwiches stay well for long time.



Ingredients:
  • Cabbage, shredded- 1 cup
  • Green bell pepper/capsicum, julienne - ½ cup
  • Baby Corns, julienne - ½ cup
  • Carrot, julienne - ½ cup
  • Onion, sliced- ½ cup
  • Tomato, deseeded & sliced- 1
  • Olives, sliced- 4 (optional)
  • Garlic, minced- 1 tbsp
  • Chili flakes- 1 tsp or to taste
  • Mix herbs- 2 tsp
  • Salt and pepper- to taste
  • Olive oil- 2 tbsp
  • Brown bread slices- 8
  • Butter- as required
  • Cheese cubes, grated- 2 (optional)
  • Tomato ketchup- for serving

Method:

  • Heat oil in a pan. Add carrot and baby corns, sauté for 2 minutes on medium heat. 
  • Add capsicum, onion and cabbage, sauté for a minute on high flame. 
  • Add garlic, olives, tomato and salt. Mix well and sauté again.
  • Add oregano, chili flakes and black pepper. Mix well and switch off the gas. Do not overcook. Keep them crunchy. 
  • Heat pan with little butter and toast the bread slices.
  • Put some sauteed veggies and grated cheese on them. Keep other slices and make sandwiches. You can use sandwich maker for this.
  • Serve hot with tomato ketchup. 

Tip:
You can add other vegetables which you like. You may add boiled and shredded chicken.
