Microwave Oreo Cake

Quick and easy to make with a few ingredients. You can celebrate any small event at home with this cake.



Ingredients:
  • Oreo Biscuits - 10
  • Milk - ½  cup 
  • Baking Powder - ½  tsp
  • Sugar - 1½  tbsp
  • Butter for greasing- as required
  • Silver sugar balls for garnishing- as required (optional)
  • Chocolate ganache for serving- as required (optional) 

Method:
  • Break oreo biscuits. Grind oreo biscuits and sugar in a grinder. 
  • Add milk and grind into smooth paste.
  • Grease a microwave safe bowl with butter.
  • Add baking powder in the batter and mix again.
  • Pour the batter in the greased bowl and put it in the microwave on high for 5 mins.
  • Put out the bowl from oven and let it cool completely.
  • Invert the cake to a plate with the help of knife.
  • Pour some chocolate ganache on the cake and sprinkle some silver balls.
  • Slice and serve with chocolate ganache.

Appe Cake Pops

These cake appe are very easy to make and quick. Without oven, you could make them. Your children must be happy to have them. 


Ingredients: 
  • All Purpose Flour (maida)- ½ cup
  • Baking powder- ½ tsp
  • Buttermilk-  2 tbsp
  • Egg-1
  • Powder sugar- ¼ cup + 1 tbsp
  • Oil - ¼ cup
  • Pineapple essence- ½ tsp
  • Lemon yellow colour- 1 pinch (optional)
  • Oil - as required for frying
  • Mix fruit jam- as required
  • Cherries- for garnishing



Method:
Sieve the flour, baking powder in a bowl and keep aside. 
Beat sugar, colour, vanilla essence and egg together in a bowl till fluffy.
Add Oil  gradually and beat till well blended. 
Add the flour and buttermilk to the mixture. Mix gently using a spatula. 
Make a batter of dropping consistency. If necessary and some little buttermilk and mix well. 
Heat the appe patra. Pour or spray  little oil in the rounds. 
Pour the cake mixture into a greased appe pan. Cover and cook for few minutes.

Fry both sides until it will be cooked & became golden brown.

Let it little bit cool. Cut appe into two halves. Spread jam on them. 


Combine them again. Stand them with the help of satay sticks. Garnish with cherries.

Veriations:
  • You may add tuti-frutti in this cake batter.
  • Make cake appe from chocolate cake batter. Deep in a chocolate gouache and spared silver sugar balls or dry fruit crush on it. Freeze for few minutes.

Eggless Tutti Frutti Cake



Ingredients: 
All Purpose Flour (maida)- ½ cup and 2 tbsp 
Baking powder- ¾ tsp
Baking Soda- ¼ tsp
Condensed milk, sweetened- ½ cup
Buttermilk-  ¼ cup
Veg. oil or melted butter- 3 tbsp
Pineapple essence- ½ tsp

Lemon yellow colour- 1 pinch (optional)
Tutti frutti-   ¼ cup (+ mix with ½ tbsp maida)
Oil or butter- ½ tsp for greasing

Method:
Sieve the flour, baking powder and baking soda in a bowl and Keep aside. Mix ½  tbsp of flour with ¼ cup tutti frutti and keep aside.
Combine condensed milk, buttermilk, oil, colour and pineapple essence in another bowl and beat well. Keep aside.
Add the flour mixture to the condensed milk mixture and mix gently using a spatula.
Make a batter of dropping consistency. If necessary and some little buttermilk and mix well.
Add tutti frutti and gently stir. Pour the mixture into a  greased and dusted cake mold.
Sprinkle some of tutti-frutti evenly over it and bake in a pre-heated oven at 180 C for 25 to 30 minutes.



Note:
This is a basic recipe. You may cut the upper crust of cake and decorate with any icing or any other things. 
Omit tutti frutti and use vanilla essence instead of pineapple essence, then this cake will become eggless sponge cake.

Eggless Banana Loaf Cake (Banana Bread)

When children come home from school, they are very hungry. At that time they should eat healthy food like this. It's really easy and quick to make. 




Ingredients:
Plain/ all purpose flour (maida)- ½ cup
Wheat Flour- ½ cup
Banana (over ripe )- 1 
Almonds and walnuts, chopped- 1 tbsp
Black Raisins (Dry grapes)- 1 tbsp
Milk- ¼ cup
Baking powder- ½ tsp
Baking Soda- ½ tsp
Sugar-  ½ cup
Vegetable Oil- ¼ cup
Nutmeg powder-  ¼ tsp or Vanilla essence- ½ tsp
Salt- a pinch 

Method:
Mix maida, baking powder, soda and sieve them together.
In a mixing bowl, mash the banana well. Add oil, sugar & nutmeg powder. Mix well until everything comes together.
Add the dry ingredients & mix gently with a spatula. Add black raisins, almonds and walnuts into the batter and mix gently. Just fold all ingredients in one direction.
Now put the batter in greased and dusted baking tin.
Bake for 20 to 30 min at 180 °C in a preheated oven.
Check with a knief by from centre ,if kniefe comes out clean then cake is baked, if not then give it some more time. 
When baked , let it cool and then remove from tin as if you remove it hot then it will not come out whole.




Note : If the cake batter looks dry, add in 1-2 tbsp of milk.

Easy Eggless Chocolate Cake

I am new in baking.  This is my first eggless cake. Yes, my first attempt is successful.




Ingredients:
  • Plain flour (Maida) - 1 cup
  • Cocoa powder- 2 tbsp
  • Baking powder- 1 ½  tsp
  • Soda bi-carb- ½ tsp
  • Condensed milk- ¾ cup
  • Unsalted melted butter or homemade butter – 4 tbsp
  • Vanilla essence- 1 tsp
  • Walnut small pieces- ½ cup
  • 2 tsp melted butter for greasing 
  • Powdered sugar- 2 tsp (optional)
  • Water- 1 cup
  • Dark chocolate bar- as required
  • Cherries- 3

Method:
  • Sieve the plain flour, cocoa powder, baking powder and soda bi-carb together and keep aside.
  • Combine the condensed milk, melted butter, vanilla essence and mix well. If you like sweeter taste, add powdered sugar.
  • Add the prepared sieved plain flour-cocoa mixture and water and mix gently with help of a spatula. Add walnut pieces and mix well. The batter should be of dropping consistency.
  • Grease the cake tin with butter on all the sides.
  • Pour the prepared cake batter into a greased 175 mm. (7”) diameter tin and spread it evenly. (I used here 2 small heart shape mould.)
  • Bake in a pre-heated oven at 180 c (360 f) for 25 to 30 minutes or till done.
  • The cake is ready when it leaves the sides of the tin and is springy to touch.
  • When ready, remove from the oven, invert the tin over a plate and tap sharply to unmould.
  • Let it little bit cool. Grate the chocolate on it. Garnish with cherry.
