Egg Sandwich

Very easy, tasty, simple quick to made.



Ingredients:
  • Brown bread slices- 8
  • Eggs, hard boiled- 3
  • Mayonnaise- 2 tbsp
  • Dijon mustard or French mustard- ½ tsp (optional)
  • Onion, finely chopped- ¼ cup
  • Chili flakes- 1 tsp or to taste
  • Black pepper- 1 tsp or to taste
  • Salt- to taste
  • Butter for toasting- as required (prefer to use garlic-herb butter for better taste)

Method:
  • Peel the egg and chop them.
  • Combine mayonnaise, dijon mustard, chili flakes, salt and pepper in a bowl. Mix well.
  • Add chopped onion and chopped eggs. Mix well. Slightly crush with spoon.
  • Toast the bread and make sandwiches. (or use sandwich maker)

Variations:
  • You can add some chopped boiled potato.
  • You can add some chopped any coloured bell pepper/capsicum.
  • You can add some iceberg lettuce.

Zucchini Fritters






Ingredients:

  • Zucchini, grated- 1 small
  • Yellow squash, grated- 1 small
  • Garlic, minced- 6 cloves
  • Eggs, beaten- 2
  • Quick oats- 3 to 4 tbsp
  • Chilli flake- 1 tsp
  • Mix herb- 1 tsp
  • Salt and pepper to taste
  • Olive oil or any oil for frying- as required


Method:
Squeeze those grated squash. 
Combine all above mentioned ingredients except oil.
Heat some oil in the pan.
Pour two spoonfuls of the egg mixture into the pan. Press down just a bit so they’re fairly even in thickness. 

Flip after a minute, roast another side till become golden brown.

Serve hot with sweet chilli sauce or any other sauce.


Tip: 
  • You can omit the eggs. Use pinch of baking powder and a tablespoon of milk.
  • Use other veggies like carrot etc along with zucchini.
  • You can add some boiled and shredded chicken or crab meat.

Bhurji - Pav (Mumbai Style Spicy Scrambled Egg)

Egg Bhurji is an easy and quick and tasty Indian Breakfast recipe. Egg Bhurji is also very popular street food in Mumbai.



Serve: 4

Ingredients:
  • Eggs- 4
  • Oil- 4 to 5 tbsp
  • Butter- 2 tsp (optional)
  • Onions, chopped- 2 med.
  • Tomatoes, chopped- 1 med
  • Green chilies, cut- 3 to 4 or as per taste
  • Capsicum, chopped-  1 small or ¼ cup (optional)
  • Ginger, finely chopped- 1 inch or 1 tbsp
  • Fresh coriander leaves- a handful
  • Turmeric powder- ½ tsp
  • Hing- ¼ tsp
  • Pav bhaji masala or garam masala- 1 tsp or as per taste
  • Salt- yo taste
  • Pav- as required for serving

Method:
  • Whisk the four eggs gently with a spoon and keep aside.
  • Heat oil in a pan, add onions, green chillies, capsicum and ginger to it. Sauté till onion turns translucent.
  • Add turmeric powder & hing.  & mix well.
  • Add tomatoes, salt, pepper and pav bhaji masala. Saute till tomato become soft.
  • Now add beaten eggs and keep whisking them until cooked.
  • Add chopped coriander leaves and butter. Mix well.
  • Serve hot with pav.

Egg Dosa/Ghavana ( Savory Egg Pancake )

Crispy and delicious Maharashtrian style egg dosa/ghavana is a perfect breakfast.



Ingredients:
  • Eggs- 2
  • Rice flour- 1 cup
  • Ginger-garlic paste- 2 tsp
  • Green chili, crushed or minced- 1 tsp or as you personal choice
  • Turmeric powder- 1 tsp
  • Chopped coriander- ¼ cup
  • Finely chopped tomato- ¼ cup
  • Finely chopped onion- ½ cup
  • Salt & pepper to taste
  • water- around ¾ cup
  • Oil as required

Method:
Combine eggs, rice flour, ginger-garlic paste, green chili crush, turmeric powder. Also add chopped onion, tomato & coriander, salt & pepper to taste. Mix and mash nicely with hand. (You can chop tomato, onion etc in food processor. Result is better.)



Mix well, add required water to adjust consistency of batter. The batter should be little thin than dosa batter.


Heat a nonstick dosa-pan.
Once pan is hot, drizzle or spray few drops of oil.
Making method is apart from dosa. Pour the batter circular, side of pan to middle of pan. (Refer the instant dosa/ghavane recipe). Dosa should be thin.
Cover and cook for 2-3 minutes.

Flip to the other side and cook for 2-3 minutes.
Serve hot with tomato ketchup.
It is also very good with prawns or chicken curry.

अंड्याचे घावन/ डोसा 

साहित्य:
  • अंडी-२
  • तांदुळाचे पीठ- १ कप
  • बारीक चिरलेला कांदा- १/२ कप
  • बारीक चिरलेला टोमाटो - १/४ कप
  • बारीक चिरलेली कोथिम्बिर- १/४ कप
  • आल-लसुन पेस्ट- १ टीस्पून
  • हिरवी मिरची ठेचा- १ टीस्पून किंव्हा कमी-जास्त तुमच्या आवडीप्रमाणे
  • हळद- १ टीस्पून
  • हिंग- १/४ टीस्पून
  • पाणी- अंदाजे १ कप
  • मीठ आणि मिरपूड -चवीप्रमाणे
  • तेल- आवश्यतेनुसार
कृती:
  • कांदा आणि टोमाटो फूड प्रोसेसर मध्ये फिरवून घेतलत तर छान बारीक होईल आणि मिळून येईल.
  • एका बाउल मध्ये पाणी व तेल सोडून बाकी सर्व साहित्य एकत्र करा. पाणी लागेल तसे हळूहळू घाला.
  • व्यवस्थित फेटून घ्या. मिश्रण डोश्यासारख सरसरीत झाल पाहिजे. मिश्रण डोश्यापेक्षा थोडं पातळ चालेल. 
  • डोसा तवा गरम करून थोड तेल पसरवा. वाटीत मिश्रण घेऊन तव्याच्या कडेपासून मध्यापर्यंत ओता. जास्त जाडसर करू नका. झाकण ठेऊन १-२ मिनिटे शिजू द्या.
  • उलटून घ्या. छान सोनेरी रंगावर दोन्ही बाजूनी भाजून घ्या .
  • गरमागरम घावणे केचप बरोबर वाढा.
  • चिकन किंव्हा कोलंबीच्या करी सोबत पण छान लागतात .
