Arbi Cutlet ~ Colocasia Root Cutlet

A tasty unusual snack.....




Ingredients:
  • Colocassia root (arbi/alakudya)- 250 gm (2 cups)
  • Cumin powder- 1 tsp
  • Coriander powder- 1 tsp
  • Dry mango powder (amchur)- 1 tsp
  • Turmeric powder- ½  tsp
  • Ginger, finely chopped or grated- 2 tsp
  • Garlic, finely chopped- 5 cloves
  • Onion, finely chopped- ¼ cup
  • Fresh coriander, finely chopped- ¼ cup
  • Corn flour or arrowroot powder- ¼ cup
  • Green chillies, finely chopped- 3 to 4
  • Salt- to taste
  • Oil for shallow frying- as required

Method:
  • Boil arbi till soft. Cool, peel and mash. You will get around 2 cups mash.
  • Heat 1 tbsp oil in a pan. Add onion, chilli, ginger and garlic. Sauté for a minute. 
  • Add mashed arbi and sauté for two minutes. 
  • Add salt to taste, dry mango powder, cumin powder, coriander powder, turmeric powder.
  • Sauté for two minutes. Remove from heat and set aside to cool.
  • Add corn flour and mix well.
  • Divide the mixture into equal parts and shape them into cutets. 
  • Heat a little oil in a pan and shallow-fry cutlets till golden on both sides. 
  • Serve hot with for mint chutney.
