Aluchi Patal Bhaji / Alavache Fatfate ~ Colocasia/Taro Leaves Curry

Aluche Fatfate or fadfade is a traditional Maharashtrian curry, which is made for Special occasion such as wedding or shradh. This curry is a delightful balance of hot, sweet and sour.

Alu is known as various name such as Taro, Colocasia, Eddoe, Elephant Ears in English and Arbi or Arvi patta in Hindi.

Good quality of alu available in monsoon. This is a good source of vitamins A and C and contains proteins.

This curry prepare various ways. I am giving here my aai's simple and delicious recipe. I don't like to making this curry with too many ingredients and heavy spices.





Instructions: 

  • There are many species of alu/taro. But all of they are not edible. Some wild species are poisonous and very itchy. So be careful while buying. Do not bring unknown alu leaves, stems and roots yourself from jungle or anywhere.
  • Be careful while cutting the stems. The stems release some juice which is stinging and itchy. So rub oil or butter on your hands before handling the stems and leaves to prevent from itching.
  • Chop carefully. Wash under running water with the help of strainer and spoon. Do not touch while washing.
  • Then only if you suffer from itching, then rub lemon juice on your hands and wash properly. Rub with alum/turati or ghee on your hands.
  • Tamarind, oil and spices remove the itchiness of alu while cooking. So don't worry abut this.  
  • And one more thing…this juice also stains clothes. So take care not to stain your clothes.




Ingredients:
  • Alu/taro, chopped- approx 3½ cups (4-5 leaves & some stems) 
  • Green chilies, chopped- 2
  • Peanuts- ½ cup
  • Tamarind- small lemon size or thick tamarind pulp- 1 tbsp or as per your like
  • Jaggery- 2 to 3 tsp or as per your like
  • Oil- 2 to 3 tbsp
  • Mustard seeds- 1 tsp
  • Cumin seeds- 1 tsp
  • Asafoetida (Hing)- ½ tsp
  • Turmeric powder- ½ tsp
  • Chili powder- 1 tsp or as per your like
  • Salt- to taste


Method:
  • Soak peanuts for atleast 3-4 hours. Then pressure cook with some salt upto 1-2 whistle.
  • Rub oil or butter on your hands before handling the stems and leaves to prevent from itching. 
  • Peel outer thick, rough skin and fiber part of stems. Remove threads if any. Peel as like drumsticks. You will get white and soft inner part of stems. 
  • Discard the veins of leaves. Chop leaves and stems carefully. 
  • Wash under running water with the help of strainer and spoon. Do not touch while washing.
  • Soak tamarind in some water water for few minutes. Squeeze the tamarind and extract the juice.
  • Pressure cook with green chili and around ½ cup upto 2 whistles. Let release the steam. (You may cook peanuts and alu at a same time but in different vessel.) 
  • Mash it well with pavbhaji/potato masher or ravi/dal masher or hand blender. 
  • Heat oil in a kadai. Add mustard seeds, once they start spluttering, add cumin seeds, hing, turmeric powder and red chili powder. 
  • Add boiled peanuts and saute for a minute. 
  • Now add mashed alu mixture. Mix well. 
  • Then add some water (approx 1 cup) to adjust the consistency (not too thick not too thin).
  • Add tamarind juice, jaggery, salt and 1 tsp Goda masala if you like. Give a nice stir.
  • Cover and cook for 5 minutes on low heat. 
  • Once it start boiling, switch of the gas.
  • Serve hot with rice or chapati.

Notes:
  • Fresh coconut slices, chana dal and raddish pieces can be added along with peanuts.
  • Adjust the quantity of tamarind and jaggery according to your taste.
  • You may use Goda masala for extra taste in this curry.
  • You can add besan for nice homogeneous blend.
  • You can make spinach like this way. 
  • If you want little twist. Heat 1 tsp oil in a small tadka pan, fry 2 tsp garlic slices till they turn brown. Add this tadka in the curry.

Valachya Ropachi Bhaji ~ Tender plants of Val Beans Stirfry

Tender, young plants of val beans are available in only monsoon. We can grow also in a tray at home. This is simple stirfry goes well with rice bhakari.


Ingredients:
  • Tender, young plants of val beans, chopped- 1 cup
  • Onion, chopped-  1 cup
  • Garlic, bruised- 5 to 6 cloves
  • Mustard seeds -  ½ tsp
  • Cumin seeds- ½ tsp
  • Asafetida (Hing) - ¼ tsp
  • Turmeric powder- ½ tsp
  • Homemade mix masala - 2 tsp or (1 tsp Chili powder +1 tsp Goda masala)
  • Grated jaggery- ¼ tsp (optional)
  • Kokum/Aamsul- 1
  • Salt- to taste
  • Oil- 2 to 3 tbsp
  • Fresh coconut, scraped- 2 tbsp 

Method:
  • Remove the roots of vegetables and wash properly. 
  • Chop the vegetables. You will get about 1 cup vegetable. 
  • Heat oil in a pan. Add mustard seeds. When the splattering starts, add cumin seeds garlic and onion. 
  • When onion become pink, add turmeric powder, hing, masala and sauté for a while. 
  • Add chopped vegetable, salt and sprinkle some water. Mix well, cover and cook for 15 to 20 minutes or till cooked on low heat. Stir occasionally. 
  • Add jaggery kokum, coconut and mix well, cover and cook for a minute on low heat.
  • Garnish with some scrapped coconut. 
  • Serve hot with rice roti/bhakari or dal-rice.


Notes:
  • You can use green chilli instead of mix masala.
  • You can grow in your home garden using val beans and tray.

वालाच्या कोवळ्या रोपांची भाजी 

पहिल्या पावसानंतर दोन दिवसातच हि भाजी बाजारात दिसू लागते आणि त्यानंतर साधारण आठवडाभर मिळते. वालाच्या शेंगा काढल्यावरही काही शेंगा किंवा दाणे शेतात पडून असतात. पावसाचे पाणी पडल्यावर त्याला कोंब धरतात, लगेच १-२ दिवसात त्याची अशी छोटी रोपे तयार होतात. अशी हि कोवळी रोपे खुडून त्याची भाजी केली जाते. गरमागरम तांदळाच्या भाकरीसोबत हि भाजी खूप मस्त लागते. 

साहित्य:
  • वालाची कोवळी रोप कापून, चिरून - १ कप (एक जुडी)
  • कांदा, चिरून- १माध्यम किंवा १ कप 
  • लसूण पाकळ्या, ठेचून - ५ ते ७
  • मोहरी-  ½ टीस्पून 
  • जीरे- ½ टीस्पून 
  • हिंग- ¼ टीस्पून 
  • हळद- ½ टीस्पून 
  • घरचा मिक्स मसाला- २ टीस्पून किंवा (१ टीस्पून मिरची पूड +१ टीस्पून गोडा मसाला)
  • गुळ- ¼ टीस्पून (ऐच्छिक) 
  • कोकम/आमसूल- १
  • मीठ- चवीप्रमाणे 
  • तेल- २ ते ३ टेबलस्पून 
  • ओले खोबरे, खोवुन - २ टेबलस्पून (ऐच्छिक) 
कृती:
  • रोपांची मुळे आणि वालांना चिकटलेली साले काढून टाका. भाजी स्वच्छ धुवून घ्या, माती असते.
  • भाजी चिरून घ्या.
  • पॅनमध्ये तेल गरम करून मोहरी टाकावी. मोहरी तडतडली की जीरे, कांदा, लसुण टाकून परतावे.   
  • कांदा गुलाबीसर झाला की त्यात हळद, हिंग, मसाला (मिरचीपूड टाकत असाल तर ती) टाकून जरासं परतून घ्यावं. 
  • आता त्यात चिरलेली भाजी व मीठ टाकून व्यवस्थित मिक्स करावं. वरून थोडसं पाणी शिंपडून झाकण ठेवावं १५ ते २० मिनिटे मंद आचेवर शिजवावं. झाकणावर पाणी ठेवलं तरी चालेल, करपायची भीती नाही. शिजताना भाजी मध्ये मध्ये हलवावी. 
  • भाजी व्यवस्थित शिजली की त्यात गुळ, कोकम आणि खोबरं घालावं. मस्त परतून मिक्स करावी.  
  • गरमागरम भाकरी सोबत किंवा डाळ-भातासोबत वाढावी. 
नोट्स: 
  • मसाला ऐवजी हि भाजी हिरवी मिरची फोडणीत चालून पण करतात. 
  • भाजी थोडी कडवट असते म्हणून थोडासा गुळ किंवा साखर लागते. 
  • मीठ घालताना काळजीपूर्वक घालावे, भाजी शिजल्यावर आळते. 
  • तुम्ही हि भाजी घरी सुद्धा उगवू शकता. ट्रे मध्ये वाल पेरून हे शक्य आहे.

Wild Vegetable Fodashi or Kulu or Kavalla

Fodashi or Kulu or Kavalla is a wild vegetable and available in the only monsoon. Maybe it is known by other names in India. I have given some recipes here for this vegetable. 
But remember, buy wild vegetables only from a regular or trustful person. Wrong wild vegetables might be poisonous. 

Introduction:
This vegetable looks like a spring onion. This is the type of grass actually.



  # Method 1 (Non-Vegetarian: with sukat/suka jawala)



Ingredients:
  • Fodashi- 1 bunch 
  • Sukat/Suka jawala- ½ cup
  • Onion, chopped-  1 cup
  • Garlic, bruised- 6 to 8 cloves
  • Asafetida (Hing) - ¼ tsp
  • Turmeric powder- ½ tsp
  • Homemade masala  or Malwani masala- 2 tsp 
  • Kokum/Aamsul- 3
  • Salt- to taste
  • Oil- 3 tbsp
Method:
  • This small grass bunch has one stiff stick inside. Remove this stick and remove flowers if any.
  • Wash carefully in large amount of water. There could be mud in the folds of leaves. 
  • Chop the vegetable. You will get about 2 cups vegetable from one bunch. 
  • Soake sukat/suka jawala in water for 15 minutes. After that squeeze these jawala.
  • Heat oil in a pan. Add garlic and onion. When onion become pink, add turmeric powder, hing, masala and sauté for a while. 
  • Add squeezed jawala and saute for a while.
  • Add chopped vegetable, salt and little water.  Mix well, cover and cook for 15-20 minutes on low heat. 
  • Stir occasionally. Sprinkle some water in between if needed. 
  • Add kokum and cook for a minute on low heat.
  • Serve hot with bhakari or dal-rice.

# Method 2 (Vegetarian: with chana dal)

Ingredients:
  • Fodashi- 1 bunch 
  • Chana dal (Split bengal gram)- 2 tbsp
  • Onion, chopped-  1 cup
  • Garlic, bruised- 6 cloves
  • Mustard seeds -  1 tsp
  • Asafetida (Hing) - ¼ tsp
  • Turmeric powder- ½ tsp
  • Homemade masala - 2 tsp or (1 tsp Chili powder +1 tsp Garam masala)
  • Salt- to taste
  • Oil- 3 tbsp
  • Fresh coconut, scraped- 2 tbsp (optional)

Method:
  • Soak chana dal in water for min 2 hours.

  • Wash carefully in large amount of water.
  • Chop the vegetable. You will get about 2 cups vegetable from one bunch. 
  • Heat oil in a pan. Add mustard seeds. When the splattering starts, add garlic and onion. 
  • When onion become pink, add turmeric powder, hing, masala and sauté for a while. 
  • Add chana dal, little water and salt to taste. Mix well, cover and cook for 5 minutes on low heat.
  • Add chopped vegetable, salt and little water.  Mix well, cover and cook for 15-20 minutes on low heat. 
  • Stir occasionally. Sprinkle some water in between if needed. 
  • Garnish with some scrapped coconut. 
  • Serve hot with chapati, bhakari or dal-rice.

# Method 3 (Vegetarian)
Bhajee/Pakode:
Chop the vegetable. Add carom seeds (ajwain), cumin powder, coriander powder, red chili powder, gram flour (besan) and salt. Add water as required. You can add some chopped onion also. Make bhaji/pakoda as usual.

You can make vadi as like Kothimbir vadi.


Tips:
  • This vegetable looks like spring onion but this takes more time to cook than spring onion. 
  • You can make dried shrimp/suka jawala with spring onion like above method.
  • This vegetable has lightly bitter taste but not as much methi/fenugreek. 


फोडशी/कुलुची भाजी


फोडशी किंवा कुलु किंवा काल्ला या नावाने हि रानभाजी रायगड जिल्ह्यात ओळखली जाते. इतर भागात या भाजीची नावे वेगळी असू शकतात. हि भाजी म्हणजे एक प्रकारचे गवतच असते. हि भाजी फक्त पावसाळ्यातच मिळते. इतर पावसाळी भाज्यांप्रमाणे हि चविष्ट असते. हि भाजी शाकाहारी व मांसाहारी ह्या दोन्ही प्रकारात करता येते. 
ओळखीच्या भाजीवाली कडूनच किंवा जाणकार व्यक्तीकडूनच रानभाज्या विकत घ्याव्यात, चुकीच्या भाज्या विषारी असू शकतात. 

# पध्दत १ (सुकट घालून)
साहित्य:
फोडशी/कुलु - १ जुडी
सुकट /सुका जवळा- १/२ कप
चिरलेला कांदा- १ कप
ठेचलेल्या लसूण पाकळ्या - ६ ते ८
हिंग- १/४ टीस्पून
हळद- १/२ टीस्पून
घरगुती मसाला किंवा मालवणी मसाला- २ टीस्पून
कोकम/आमसूल- ३
मीठ चवीनुसार
तेल- ३ टेबलस्पून

कृती:
  • सुकट  निवडून पाण्यात किमान १५ मिनिटे भिजत घाला. नंतर पाण्यातून काढून घट्ट पिळुन घ्या.  
  • भाजीच्या छोट्या जुडित आत एक कडक असा काठी सारखा भाग असतो तो काढून टाका. कधी कधी त्याला फुले/तुरे आलेले असतात, तेही काढून टाका.    
  • भरपूर पाण्यात काळजीपुर्वक स्वच्छ धुवून घ्या. मुळाजवळ आणि पानांच्या चुणेत माती असते. 
  • नंतर चिरून व धुऊन घ्या. मुळे आधीच कापलेली असतात. पांढरा भाग असती तोही चिरून घ्यावा. साधारणपणे २ कप एवढी भाजी मिळेल. 
  • एका कढईत तेल गरम करून त्यात लसुण, कांदा टाका. कांदा गुलाबी झाला कि त्यात हळद, हिंग आणि मसाला टाका. जरासे परता. 
  • त्यात भिजवून पिळुन घेतलेली सुकट टाका व जराशी परतून घ्या. 
  •  नंतर त्यात चिरलेली भाजी व मीठ टाका. व्यवस्थित एकत्र करून घ्या.
  • त्यात थोडे पाणी शिंपडा. झाकण ठेऊन मंद आचेवर १५ ते २० मिनिटे किंव्हा भाजी शिजेपर्यंत शिजू द्या. 
  • भाजी शिजत असताना थोड्या थोड्या वेळाने हलवून जरुरी प्रमाणे पाणी घाला. नाहीतर भाजी खलीन करपेल. 
  • गरमागरम भाकरी किंव्हा आमटी-भातासोबत वाढा.

# पध्दत २ (डाळ घालून)
साहित्य:
फोडशी/कुलु - १ जुडी
चणा डाळ - २ टेबलस्पून
चिरलेला कांदा- १ कप
ठेचलेला लसूण पाकळ्या - ६
राई/ मोहरी- १ टीस्पून
हिंग- १/४ टीस्पून
हळद- १/२ टीस्पून
घरगुती मसाला किंवा मालवणी मसाला - २ टीस्पून (किंव्हा मिरची पूड- १ टीस्पून+ गरम  मसाला- १ टीस्पून)
मीठ चवीनुसार
तेल- ३ टेबलस्पून
खवलेले ओलं खोबरं- २ टेबलस्पून (ऐच्छिक)

कृती:
  • चणा डाळ धुवून २ तास भिजत ठेवा. 
  • भाजीच्या छोट्या जुडित आत एक कडक असा काठी सारखा भाग असतो तो काढून टाका. कधी कधी त्याला फुले/तुरे आलेले असतात, तेही काढून टाका.    
  • भरपूर पाण्यात स्वच्छ धुवून घ्या. मुळाजवळ माती असते. 
  • नंतर चिरून व धुऊन घ्या. मुळे आधीच कापलेली असतात. पांढरा भाग असती तोही चिरून घ्यावा. साधारणपणे २ कप एवढी भाजी मिळेल. 
  • एका कढईत तेल गरम करून मोहरी टाका, मोहरी तडतडली कि लसुण, कांदा टाका. कांदा गुलाबी झाला कि त्यात हळद, हिंग आणि मसाला टाका. जरासे परता. 
  • त्यात भिजलेली डाळ व थोडे पाणी टाका. झाकण ठेऊन मंद आचेवर ५-७ मिनिटे शिजू द्या. 
  • नंतर त्यात चिरलेली भाजी व मीठ टाका. व्यवस्थित एकत्र करून घ्या.
  • त्यात थोडे पाणी शिंपडा. झाकण ठेऊन मंद आचेवर १५ ते २० मिनिटे किंव्हा भाजी शिजेपर्यंत शिजू द्या. 
  • भाजी शिजत असताना थोड्या थोड्या वेळाने हलवून जरुरी प्रमाणे पाणी घाला. नाहीतर भाजी खलीन करपेल. 
  • वरून ओलं खोबरं पेरा. गरमागरम भाकरी किंव्हा चपाती किंव्हा आमटी-भातासोबत वाढा.

टिपा:
  • या  भाजीची भजी पण करता येते. भाजी बारीक चिरून घ्यावी. त्यात थोडा चिरलेला कांदा, ओवा, धने-जिरे पूड, मिरची पूड, मीठ घालून कालवावी आणि जरुरीप्रमाणे बेसन घालावे. हवे असल्यास थोडे पाणी घालावे. चिमूटभर खायचा सोडा घातला तर भज्या हलक्या होतात. आणि नेहमीप्रमाणे खरपूस टाळून घ्याव्यात.  
  • हि भाजी पातीच्या कांद्याप्रमाणे दिसते. पतीचा कांदा फार लवकर शिजतो पण ह्या भाजीला शिजायला जास्त वेळ लागतो.
  • तुम्ही वरील पद्धतीने सुकट घालुन पातीच्या कांद्याची भाजी करू शकता.
  • हि भाजी किंचित कडू असते पण अगदी मेथी इतकी कडू नसते.
  • या भाजीच्या पानांची भजी पण करता येते. पालक किंवा मेथीची गोळा भजी करतो तशी.

Spinach in Buttermilk Curry (Takatala Palak)

A traditional recipe of spinach and other leafy vegetables. My granny used to make it. I love this with steamy rice. This curry also known as "Palak Kadhi" and "Takatala Palak" in Marathi.

Ingredients:

  • Spinach- 1 medium bunch (you can use fenugreek or chakvat) 
  • Buttermilk- 2 cups
  • Peanuts- ¼ cup
  • Split bengal gram (chana dal)- 1 tbsp
  • Bengal gram flour (besan)- 2 tbsp
  • Green chilies, finely chopped- 2 to 4
  • Oil or pure ghee- 2 tbsp
  • Cumin Seeds- ½ tsp
  • Turmeric powder- ½ tspAsafetida (Hing)- ¼ tsp
  • Dry red chilies, torn- 2 (I used 5 small "Bor" chilies)
  • Sugar- a pinch
  • Salt to taste

Method:

  • Wash peanuts and chana dal. Soak them for 2 hours. 
  • Wash and finely chop spinach leaves. 
  • Combine chopped spinach and chilles along with some water in cooker separator .
  • Put peanuts and chana dal in other separator or in small bowl.
  • Put both separators in pressure cooker and cook till 2 to 3 whistles given out.
  • Once the pressure is released, whisk till the spinach is almost mashed. Add besan and whisk again.
  • Add some water in spinach mixture and boil it. Keep stirring continuously until curry starts boiling.
  • Once it is boiled, add buttermilk, salt and sugar. Keep stirring continuously until curry starts boiling. (If you stop stirring, curry become curdle or separate.)
  • Meanwhile heat ghee or oil in a small pan. Add cumin seeds, red chills, turmeric powder and hing. Mix it and add cooked peanuts & chana dal. Mix well and saute for a minute.
  • Add this tempring or tadka in boiling curry. 
  • Give a quick stir and cover this curry with a lid. Switch off the gas. 
  • After 5 minutes, give a nice stir to curry. Now it is ready for serve.
  • Serve hot with chapatti or steamy rice.

Tips:

  • Buttermilk should be thick and sour.
  • If buttermilk has less sourness, add little tamarind pulp in the curry.

Kadam Saag/Sabji ~ Kohlrabi Greens Stirfry

Last year I have visited Jammu-Kashmir. I ate Kadam Saag/Sabji in Pahalgam. I liked this so I tried this recipe. My sabji's taste went very near to that sabji.



This is Kohl rabi (German turnip or turnip cabbage). This is also known as Ol kopi, Nool kol, Ganth gobi, Kadam, Naval kol, Al kol. This is an annual vegetable, and is a low, stout cultivar of cabbage. Kohlrabi can be eaten raw as well as cooked. This is available all over India in winter.
Here I used only Kohl rabi greens (leaves). I will show you later the recipe kohlrabi bulb. We call this Naval kol or Al kol in Maharashtra. We cook this bulb with prawns or dried prawns (sode) or chana dal.



  Ingredients: 
  • Kohl rabi /kadam greens/leaves with tender steams, chopped-  1 ½ cup (It should be tender/young and fresh.)
  • Onion, chopped- 1 med
  • Tomato, chopped- 1 med
  • Turmeric powder- ½ tsp
  • Asafoetida ( Hing)- ¼ tsp
  • Mustard seeds- 1 tsp (if you are using mustrad oil, then omit this)
  • Cumin seeds- ½ tsp
  • Red chili powder 1 tsp
  • Ginger~garlic paste- 1 tsp
  • Oil- 2 to 3 tbsp (Kashmiri people use Mustrad oil but any other oil will do)

Method:
  • Pressure cook or boil these chopped leaves till tender. Let it cool and squeeze.
  • Heat oil in a kadhai or a pan. Add muster seeds and let them crackle.
  • Add cumin seeds and saute for a while.
  • Add chopped onion and saute it till it turns pink.
  • Add turmeric powder, hing and saute for a while.
  • Add tomato, ginger-garlic paste and salt. Saute till they turn soft.
  • Add squeezed leaves and mix well.
  • Cover and cook for 3-4 minutes on low heat.
  • Serve hot with chapati or dal-rice.

Note:
This stir-fry veggie can be made with Spinach, Kai lan or Collard greens as well. Do not need to boil or precook spinach.

Palakchi Bhaji (Maharashtrian Style Spinach)

The simple and authentic recipe of spinach.......... enjoy this with dal-rice.




Ingredients:

  • Spinach, chopped - 3 cups (2 bunches)
  • Green chilles, chopped in one inch pieces- 2 to 4 (as per your taste)
  • Chopped onion-  1 cup or 1 large
  • Garlic cloves, peeled & crushed- 6 
  • Turmeric powder- ½ tsp
  • Asafetida (Hing)- ¼ tsp
  • vegetable oil- 2 to 3 tbsp
  • Scraped fresh coconut- ¼ cup 
  • Salt to taste




Method:

  • Separate the leaves from the stem. 
  • Wash and chop the leaves and the tender stems finely. 
  • Heat the oil in pan. Add the green chillies, garlic & saute.
  • Add onions & fry till translucent. Add turmeric powder & hing. Sauté & mix well.
  • Add the spinach and salt. (Use salt carefully.)
  • Reduce the flame & cover the pan. In a few minutes, the quantity of the vegetable would have reduced drastically and the vegetable starts sweating. Do not reduce this water completely. 
  • Cook for another 4-5 minutes. Add scraped fresh coconut & mix well.
  • Serve hot as a side dish. It can be had with chapattis or bhakris, dal-rice.

Bharangichi Bhaji (Spicy Clerodendrum Serratum Stir-fry)

Clerodendrum Serratum (Bharangi) is a wild vegetable. This is available only in Monsoon. According to Ayurveda it is one of the best anti inflammatory herb.It is very beneficial in digestive disorders and effectively used in loss of appetite, indigestion, anorexia and intestinal gas. So we have to eat this vegetable at-least once in a year, here is recipe:


Ingredients:
  • Bharangi leaves, roughly chopped - around 2 cups
  • Dried Val beans or Pavata beans- ¼ cup
  • Onion, chopped- 1 med. size
  • Garlic, bruised- 6 to 8 cloves
  • Turmeric powder – ½ tsp
  • Asafetida (Hing)- ¼ tsp
  • Homemade masala or Red chili powder –2 tsp 
  • Veg. oil- 3 to 5 tbsp
  • Salt to taste
  • Scraped fresh coconut- 2 tbsp for garnishing (optional)

Method:
Wash dried val beans. Soak in water for  overnight or at least 6 hours. Drain them.
Wash properly bharangi leaves.



Chopped roughly. Combine chopped bharangi, soaked beans and required water. Cook in pressure cooker. Take 3 to 4 whistles. Squeeze it.  Don't discard all water, keep little water.


Heat oil in a  pan & add onion & garlic, sauté till translucent  Add turmeric, hing and masala powder. Sauté for a minute. Add boiled leaves and beans. 

Sauté for 2-3 minutes on simmer. Add salt & mix well. Cover & cook for 2 minutes on simmer. Stir occasionally.
Garnish with scrapped coconut. Serve hot with rice or bhakri/roti.

You can use small red lobia instead of val beans.

Second method :
Wash properly bharangi leaves. Chopped roughly and boil them.
Heat oil in a  pan, Add pieces of 4 dry red chilies, onion & garlic, sauté till translucent.  
Add turmeric, hing and  . 
Sauté for a minute. Add boiled leaves and salt & mix well. Cover & cook for 3-4 minutes on simmer.


भारंगी हि एक रानभाजी आहे. हि भाजी फक्त पावसाळ्यातच बाजारात येते. हि भाजी पोटाच्या विकारांवर अतिशय गुणकारी आहे. आपल्या आयुर्वेदात या वनस्पतीचे अनेक औषधी गुणधर्म सांगितले आहेत. त्यामुळे वर्षातून किमान एकदा तरी हि भाजी नक्की खाल्ली पहिजे.
साहित्य:
  • भारंगीची पाने- २ वाटे (चिरून अंदाजे २ कप)
  • वाल किंवा पावटे - १/४ कप 
  • कांदा,चिरून - १ मध्यम आकाराचा 
  • लसूण पाकळ्या, ठेचून - ६ ते ८
  • हळद- १/२ टीस्पून 
  • हिंग- १/४ टीस्पून 
  • घरगुती मसाला किंव्हा मिरची पावडर- २ टीस्पून 
  • तेल- ३ ते ५ टेबलस्पून 
  • मीठ- चवीनुसार 
  • खवलेले ओले खोबरे- २ टेबलस्पून (ऐच्छिक )
कृती:
  • आदल्या दिवशी रात्री, वाल/पावटे स्वच्छ धूऊन पाण्यात भिजत घालावेत. 
  • प्रथम पाने व्यवस्तीत धुऊन घ्यावीत . फार बारीक चिरू नयेत किंव्हा हाताने तोडून घ्यावीत . 
  • चिरलेली पाने व भिजवलेले वाल एकत्र करून कुकरमध्ये तीन शिट्या काढून उकडून घ्यावेत. 
  • एका पँन मध्ये तेल गरम करून त्यात कांदा, लसूण टाकून गुलाबी रंगावर परतून घ्या. नंतर त्यात हळद, हिंग व मसाला टाकून परतून घ्या. मीठ व उकडलेली भाजी पिळून त्यात टाका. भाजी फार घट्ट पिळू नका नाहीतर भाजी खूपच कोरडी होइल. 
  • छान एकत्र करून झाकण लाऊन दोन वाफा काढा. भाजी तयार. वरून खोबर पेरा. 
  • भाकरी किंव्हा आमटी-भातासोबत गरमागरम वाढा.
दुसरी पद्धत :
भाजी कापून उकडून घ्या . तेलावर कांदा, लसुन आणि ४-५ लाल सुक्या मिरच्या तोडूनकिंवा हिरव्या मिरच्या कापून टाका. कांदा गुलाबी झाला की त्यात उकडलेली भाजी पिळून टाका. मीठ टाकून भाजी परतून घ्या. झाकण लाऊन दोन वाफा काढा. भाजी तयार. वरून खोबर पेरा किंवा शेंगदाण्याचा कूट किंवा तिळकूट घाला. 

टीप: वालाच्या एवजी छोटी लाल चवळी वापरू शकता.

Methi Paratha (Methi/Fenugreek Thepala)

Healthy and yummy all in one neat little package! It's perfect tiffin menu also. Methi (fenugreek) has numerous health benefits.


Ingredients:
  • Whole wheat flour- 2 cups
  • Chopped fenugreek (methi) leaves- 1 cup (1 small bunch)
  • Gram flour/ chickpea flour (beasan)- 2 tbsp
  • Red chilli powder or green chilli crush- 2 tsp or your personal like
  • Minced garlic- 2 tbsp
  • Sesame seeds- 1 tbsp
  • Turmeric powder- ½ tsp
  • Asafetida (hing)- ¼ tsp
  • Hot oil (mohan)- 1 tbsp
  • Salt to taste
  • Oil - as required
  • Water- approx. ½ cup

Method:
Combine fenugreek (methi) leaves, gram flour, red chili powder, garlic, sesame seeds, turmeric, hing & salt in a bowl or thali. Mix well & let it marinate for 15-20 minutes.


Add wheat flour and hot oil(mohan). Knead into a soft and smooth dough using water only if required. Keep aside for 5 to 10 minutes.


Divide the dough into small portions. 



Roll out each portion into a small circle's. Use plastic sheet/paper to roll. Using plastic paper, you can roll the paratha without using extra flour.  When you are roasting paratha, it will required less oil this way. 



Heat a tava (griddle) and roast each paratha (circle) using a little oil, till it turns golden brown in colour on both the sides.
Serve hot with tomato chutney or tomato ketchup or curd or any Indian pickle.
Methi thepala and chunda is very popular combination in Gujarat.



I love this recipe as it does not call for any stuffing like the traditional paratha's. It is just chop and mix in bowl.

Kolambi Aani Kanda Patichi Bhaji (Spring Onion With Prawns )

Different combination with awesome taste......


Ingredients:
  • Peeled small prawns - ½ cup to ¾ cup
  • Chopped spring onions (white and green part)- 1 bunch (approx 1 or 1 ¼ cup)
  • Chopped onion- ¼  cup (optional)
  • Crushed garlic - 6 cloves
  • Sunday masala or homemade masala- 2 to 3 tsp (or 1 ½ tsp of chilli powder + 1 ½ tsp of garam masala)
  • Turmeric powder- ½ tsp
  • Asafetida (Hing)- ¼  tsp (optional)
  • Dried kokam- 3-4 (if not available then use ½ cup tomato instead of this)
  • Oil- 4 tbsp                                    
  • Salt to taste

Method:
  • Peel & devein prawns. Wash properly and marinate with ½ tsp of turmeric & ¼  tsp of salt.
  • Chop the spring onions - the greens and the bulb (white part).
  • Heat oil in a pan & add onion & garlic, sauté till it turn translucent. Add turmeric powder, hing and sauté for a minute. 
  • Add Sunday masala/homemade masala & sauté for a minute. Add prawns & sauté for 2 minutes. 
  • Add kanda-pat & salt. Mix well & sauté for a minute.  Cover & cook for 4-5 minutes or until spring onion cooked. In a few minutes, the quantity of the vegetable would have reduced drastically and the vegetable starts sweating. So add salt carefully & remember we have put some salt in prawns marination also.
  • Add  kokam  & sauté.  Reduce the moisture in pan. Serve hot with Chapati or Bhakri

Lal Mathachi Bhaji (Stirfry Of Amaranth/Red Leafy Vegetable)

Lal Math is a nutritive  leafy vegetable. This red leafy vegetable has a nice taste and is very rich in Iron, a mineral needed by people in all age groups. I cook it very simple & traditional way. In north India, this known as "Amaranth" leaves.   


 Ingredients:
Chopped lal math (red leafy vegetable)- 2 cups (2 bunches)Green chilles chopped in one inch pieces- 2 to 4 (as per your taste)
Chopped onion-  ½ cup
Garlic cloves, peeled & crushed- 6 (just hit once with pestle/batta)
Turmeric powder- ½ tsp
Asafetida (Hing)- 1/8  tsp
vegetable oil- 3 tbsp
Scraped fresh coconut- ¼ cup 
Salt to taste




Method:
Separate the leaves from the stem and chop the leaves and the tender stems finely.

Wash them to remove the traces of soil & drain the water.


 

Heat the oil in pan. Add the green chillies, garlic & saute.

 Add onions & fry till translucent. Add turmeric powder & hing. Sauté & mix well.


Add the lal math and salt. 


Reduce the flame & cover the pan. In a few minutes, the quantity of the vegetable would have reduced drastically and the vegetable starts sweating.

Cook for 4-5 minutes. Add scraped fresh coconut & mix well.



Serve hot as a side dish. It can be had with chapattis or bhakris, rice & dal or rice and curries.
I served here with bajara roti/bhakri.

  • Semi red leaves: Which I used in this dish.
  • Fully red leaves : Shown in below...(But method of cooking is same as above.)
