Kakadiche Gharge /Kakadiche God Vade (Sweet Cucumber Poori)

Gharge means sweet poori. Gharge is a traditional Maharashtrian recipe made with rice flour, jaggery and cucumber or red pumpkin or banana or jackfruit.
Today, I am showing you Cucumber Gharge.
In our Kokan region, Kakadiche Gharge are made in generally during Ganpati festival for goddess Gouri.

Ingredients:
  • Jumbo Cucumber (Shravan kakadi/Tavas), peeled, grated and squeezed- 2 cups from 1 cucumber
  • Jaggery (gul)- 1 cup (Grate or cut into small pieces)
  • Cardamom powder- ½ tsp
  • Rice flour - approx 1 ½ cup
  • Fine Semolina (Barik Rava) - ½ cup
  • Hot refined oil (mohan) - 2 tbsp
  • Salt - a pinch
  • Refined Oil to Deep fry- as required

Method:
  • Peel and discard the seeds from cucumber. Then grate and squeezed tightly cucumber and keep aside. 
  • Soak rava in ½ cup of juice of cucumber for 15-20 minutes.  
  • Combine jaggery and grated cucumber in a heavy bottom or non-stick pan.
  • Cook together, saute in between. 
  • Once jaggery is melted and mixed well with cucumber, remove from the flame. Let it cool a little. 
  • Add cardamom powder and mix well.
  • Take rice flour, add hot oil (mohan) on it and mix well.
  • Now combine soaked rava, rice flour and cucumber mixture. 
  • Mix well and make a firm dough. The dough should be neither too tight nor too lose. (If you feel it is loose you can add some flour to it.) 
Cover the dough and rest it for 15-20 minutes.
  • Make small balls of dough. Pat them out with fingers on the greased plastic sheet. 
  • Deep fry on medium heat in hot oil until golden brown from both sides. Drain Gharge on a tissue paper. 
  • Gharage taste better with rice kheer.


Tips:
  • Gharage can be stored for 2-3 days without refrigeration.
  • Don't add extra water to dough try to knead dough in juice released from a cucumber.
  • Traditionally gharge are patted on a banana leaf.
  • You can make drink from remaining cucumber juice. Add some lemon juice, some mint leaves, a pinch of black salt. and jeera powder

Ambyacha Sheera ~ Mango Sheera

Sheera is a traditional and popular Maharashtrian sweet dish. Maharashtrians. Mango adds its own flavour to the sheera and makes it very special and tasty. 




Ingredients:
  • Barik Rava / Fine Semolina- 1 cup
  • Milk- 1 cup
  • Water- 1 cup
  • Fresh Mango puree- 1 cup (Read in detail, plz see below in notes.) 
  • Sugar- ¾  cup
  • Pure ghee-  ½ cup
  • Green cardamom powder- ¾  tsp
  • Salt- very very little, less than ¼ tsp
  • Saffron strands- a pinch (optional)
  • Cashew nuts, Almonds and Pistachios, chopped- ½ cup (optional)


Method:
  • Roast rava in a heavy bottom or non-stick pan on a low to medium heat.
  • At the same time, on other side, keep milk+water to boil on low-med heat. Add saffron strands into the milk.
  • Add all ghee in between, roast rava for 15 to 20 minutes or until sooji gets golden brown colour, it releases a lovely appetizing aroma.
  • In between, add nuts so they will also roast along with rava.
  • Meanwhile, the milk will have started boiling.
  • Pour the milk in rava mixture carefully and give a nice stir.
  • Cover the pan with a lid and let rava cook for 3-4 minutes on low heat.
  • After rava mixture gets thicker, add sugar, mango puree, cardamom powder and salt. Give a nice stir and again cover with the lid for 2-3 minutes.
  • Serve hot.

Notes:

  • Do not roast rava/semolina on high heat hence, it changed colour from outside. It remains raw inner side.
  • Choose the ripe mango. Wash them and cut into pieces. Scoop the pulp with a spoon. Blend it until it makes a smooth consistency. 
  • You can use finely chopped or mashed mango instead of mango puree if you like chunks in your sheera.
  • Usually we measure ingredients using vati or katori in our kitchens. I have changed the quantities here to cups, since it is easy to understand for everyone.

Sukya Khobaryachi Karanji ~ Maharashtrian Style Gujia

Karanji is made specially for Diwali in Maharashtra. This is a popular Indian dessert prepared all over India. Karanji is also known as Gujia or Pirikiya in north India. So you can find many versions of Karanji or Gujia. Layer karanji looks beautiful and fully white but time-consuming. This is plain karanji which is very easy and quick to make. So I prefer to do this this Diwali.
Here is our recipe........



Ingredients:
Refined sunflower oil or Vanspati ghee for frying- as required

For the filling: 
  • Dry coconut, finely grated- ½ cup (You can use desiccated coconut)
  • Fine semolina/ Barik rava/ Mahin suji-  ½ cup
  • Powdered sugar- approx ¾ cup
  • Poppy seeds (Khaskhas)- 1 tbsp (optional)
  • Charoli (chironji)- 1 tbsp
  • Cardamom powder- 1 tsp
  • Nutmeg powder- ½ tsp
  • Pure ghee- 1 tsp
For the cover:
  • All purpose flour / Maida- 1cup
  • Fine semolina/ Barik rava/ Mahin suji-  ½ cup
  • Salt- a pinch
  • Hot Refined sunflower oil or Vanspati ghee (mohan)- 5 tbsp
  • Milk + water or only milk- approx ½ cup

Method:
For filling:
  • Roast coconut lightly until light brown and crispy.
  • Roast poppy seeds until golden brown.
  • Roast  chironji lightly.
  • Heat 1tsp ghee and roast semolina in this ghee until it emits nice aroma and turns light brown.
  • Crush or churn coconut with hands.
  • Combine coconut, poppy seeds, semolina, chironji, cardamom powder, nutmeg powder and powdered sugar.
For the cover:
  • Sieve maida, combine all dry ingredients and add hot oil/ghee (mohan), mix with a spoon.
  • Add milk+water little by little by using spoon. Knead and make a tight dough.
  • Cover and set the dough aside for two hours.
  • Knead this dough again. If it is going very hard to knead, cut into small pieces of dough and knead in food-processor.
  • Now the consistency of the dough should be such that you should be able to roll it. 


Assembly:
  • Divide dough into small portions and shape into balls. 
  • Roll out each ball into a circle, put a small portion of the filling.  
  • Then cover it with the other half bringing the edges over each other. Seal the edges with milk properly so that the mixture doesn't come out. Make sure there is no air inside the sealing.
  • With karanji cutter, cut off the excessive part of the edges. Be careful while doing so as if you cut very close the filling the karanji would open up. Cover karanjis with a damp cloth.
  • Heat sufficient oil/ghee in a kadai on high heat and deep fry the karanjis on medium to low heat in till they are crisp and a pleasant golden colour. 
  • Drain on absorbent paper and allow to cool completely.
  • Allow to cool. Store in air tight container.


सुक्या खोबऱ्याच्या करंज्या

साहित्य:
रिफाइंड सुर्यफुल तेल किंवा वनस्पती तूप, तळण्यासाठी- आवश्यकतेनुसार 
पारी-
  • मैदा- १ कप (२ वाट्या)
  • बारीक रवा- १/२  कप (१ वाटी) 
  • मीठ- चिमुटभर 
  • गरम रिफाइंड सुर्यफुल तेल किंवा वनस्पती तूप (मोहन)- ५ टेबलस्पून 
  • दुध किंवा दूध+पाणी- अंदाजे १/२  कप  

सारण/चुरण-
  • बारीक रवा- १/२ कप (१ वाटी)
  • सुके खोबरे, बारीक खिसुन- १/२ कप (पाऊण वाटी ते १ वाटी)
  • पिठीसाखर- अंदाजे ३/४ कप (१ वाटी) ~ आपल्या चवीप्रमाणे थोडे कमी-जास्त घ्यावे पण सारण जास्त गोडच हवे, कारण नंतर करंजी खाताना ते बरोबर लागते.
  • खसखस- १ टेबलस्पून (ऐच्छिक)
  • चारोळी- १ टेबलस्पून 
  • वेलची पूड- १ टीस्पून
  • जायफळ पूड- १/२ टीस्पून
  • साजूक तूप- १ टीस्पून


कृती :
  • प्रथम खोबरे चुरचुरीत भाजून घ्या व हाताने बारीक चुरा, खसखस भाजून त्याची भरड पुड करावी, नाही केली तरी चालेल. 
  • १ टीस्पून तुपावर रवा खमंग भाजून घ्यावा. 
  • नंतर दिलेले सर्व एकत्र करून सारण तयार करून ठेवावे. 
  • रवा-मैदा एकत्र करून त्यात थोडे मीठ घालून मिक्स करावे व मोहन घालावे. थोडं थंड झाल्यावर सर्व पीठ हाताने चोळून घ्यावे म्हणजे सर्व पीठाला मोहन लागते. 
  • दुधाने घट्ट पीठ भिजवावे व झाकून ठेवावे. २ तासानंतर पीठ कुटून घ्यावे किंवा फूडप्रोसेसरला बारीक तुकडे करून फिरवावे. 
  • भिजवलेल्या पीठाचे छोटे छोटे गोळे करावे. 
  • त्याच्या पुऱ्या लाटाव्यात. एकदम पातळ पण नको आणि जाड पण नको. 
  • सारण भरून घ्यावे व पुरीच्या कडेला बोटाने जरासं दूध लावून घडी करून दाबावे म्हणजे सारण बाहेर येणार नाही. नंतर कातण्याने कापून घ्यावे. अश्या प्रकारे करंज्या तयार करून घ्याव्यात.  तयार कारंज्यावर ओले (भिजवून घट्ट पिळलेले) फडके ठेवा म्हणजे त्या सुकत नाहीत. 
  • कढईत तेल/तूप चांगले तापवून घ्यावे. मात्र करंज्या मध्यम ते मंद आचेवरच तळाव्यात. तळताना करंजीवर तेल घालत घालत तळावे. 
  • तळलेल्या करंज्या टिशु पेपर किंव्हा कोऱ्या पेपरवर पसरून ठेवाव्यात.
  • करंज्या पूर्ण थंड झाल्यावरच हवाबंद डब्यात भराव्यात. 

टीपा :
  • आम्ही सारण जरा जास्तच करून ठेवतो. कारण तुळशीच्या लग्नाच्या वेळेला पुन्हा करंज्या कराव्या लागतात. सारण उरले तर फ्रिज मध्ये ठेवावे, ६ महिने टिकते. पुन्हा करंज्या करायचा कंटाळा आला तर कणकेचे लाडू किंवा मेथीचे लाडू मध्ये वापरावे.   
  • साठ्याच्या करंज्या किंवा खाज्याचे कानवले करायला थोड्याश्या वेळखाऊ असतात  पण खूप सुंदर दिसतात तसेच त्याला खूप पदर सुटतात. त्या करंज्या मी पुढल्या वेळेस दाखवेन.

Ravyachi Kheer (Semolina Pudding)

Ravyachi Kheer is a Maharashtrian sweet dish made from semolina (rava). It is made using semolina,ghee, milk and sugar. This very tasty. quick and easy to make.





Ingredients:
  • Semolina/sooji/rava- 2 tbsp
  • Pure ghee- 2 tsp
  • Milk- 2 cups
  • Sugar- 3 tbsp or to taste
  • Chironji/Charoli-  1 tbsp
  • Cardamom/elayachi powder- ¼ tsp

Method:
  • Heat ghee in a pan. Add rava and fry on a low heat for 4-5 minutes until light golden color.
  • Meanwhile boil milk on other side. Add milk and chironji mix well. Stir continuously. Cook for 2-3 minutes.
  • Add sugar and elayachi powder. Gently stir well for another 4-5 minutes on low heat. Make sure that lumps are not formed in kheer. 
  • Serv hot. This kheer goes well with puri.

Pangi / Pange

Pangi or Pange means rice flat bread which is wrapped and cooked in banana leaf. This is one more our Konkan special recipe. The banana leaves give a wonderful flavor to this bread.
This is made by different ways....
1. Sweet Pangi - is made with ripe banana or cucumber. (I have given this recipe here.)
2. Savory Pangi- which is made with green chili, cumin seeds, coriander leaves etc.
3. Plain Pangi- which is served with curry or chutney as a roti.


As our family tradition, we are made this in ganesh festival especially on the day when Gauri Mata arrives.




Ingredients:
  • Rice flour- ½ cup
  • Fine semolina/ barik rava- 1 tbsp
  • Jaggery- ¼  cup or as your likes
  • Nutmeg powder- a pinch
  • Ripe bananas- 2 
  • Pure ghee- 1 tbsp
  • Salt- a small pinch
  • Banana leaves- for wrapping 

Method:
  • Grate jaggery and dissolve in very little water.
  • Mash the bananas well.
  • Combine banana mash, nutmeg powder, salt, rava and rice flour. Mix well.
  • Add jaggery water and knead well. Use water if needed. The dough should not be too thick or too loose.  
  • Add ghee and knead again. Rest this dough for 30 minutes.
  • Knead dough again and divide into 3 parts.
  • Heat a griddle/tawa or pan.
  • Take one banana leaf. Using wet hand, spread the dough into a circle using your fingers. The disc should be even and not too thick. You can make more thin. 
  • Fold the leaf and make a parcel.  
  • Shift the parcel on the preheated tawa. Cover with a lid. 
  • Let it cook on medium flame for about 2-3 minutes or till the banana leaf underneath appears roasted/burnt.
  • Flip the banana leaves parcel using a tong and cook on the other side. Then carefully put out the pangi from the banana leaf.
  • Serve hot with pure ghee and milk.

पानगे/पानगी
कोकणात पानगे/पानगी आणि पातोळे हे दोन पदार्थ केले जातात. हे दोन्ही पदार्थ पूर्णपणे वेगळे आहेत. पानगे सुद्धा वेगवेगळ्या प्रकारे केले जातात.
एक प्रकार म्हणजे केळ किंवा काकडी वापरून बनवलेले गोड पानगे, दुसरा प्रकार म्हणजे  जिरे, मिरची, आलं चे वाटण लावून बनवलेले तिखट पानगे आणि तिसरा प्रकार म्हणजे भाकरीप्रमाणे  ना गोड ना तिखट, चटणी किंव्हा कुठल्याही रश्यासोबत खायचे.
आज मी त्यातला गोड प्रकार दाखवणार आहे. गौरीचे आगमन झाल्यावर त्या संध्याकाळी नैवेद्यात हे पानगे आमच्याकडे बनवतात.  
केळीच्या पानात भाजल्याने पानग्यांना एक छान सुवास येतो.

साहित्य:

  • तांदूळ पीठ- १/२  कप
  • रवा- १ टेबलस्पून
  • गुळ- १/४  कप किंवा आवडीप्रमाणे कमीजास्त
  • जायफळ पूड- चिमूटभर
  • पिकलेली केळी- २
  • मीठ- एक छोटी चिमूटभर
  • साजूक तूप- १ टेबलस्पून
  • केळीची पाने- गुंडाळण्यासाठी


कृती:

  • गुळ हाताने मोडून किंवा किसून घ्या.  आणि अगदी थोड्याश्या पाण्यात विरघळून घ्या.
  • केळ कुस्करून घ्या.
  • त्यात रवा, तांदुळाचे पीठ , मीठ घालून व्यवस्थित कालवून घ्या.  
  • नंतर त्यात गुळाचे पाणी टाकून मळून घ्या. तूप टाकून पुन्हा मळून घ्या. कणिक फार घट्टही नको आणि सैलही.
  • अर्धा तास हे कणिक झाकून ठेवा.
  • अर्ध्या तासानंतर पुन्हा मळून त्याचे ३ ते ४ गोळे करा.
  • पाण्याचा हात लावून केळीच्या पानावर भाकरीप्रमाणे थापून घ्या. खुप जाड थापू नका. (माझ्या सासूबाई फार पातळ थापत नाहीत पण तुम्ही आमच्या पानगीपेक्षा पातळ थापले तरी चालेल.)
  • पानगा थापून झाला कि पण दुमडून त्याचे पाकीट बनवावे.
  • हे पाकीट गरम तव्यावर झाकण ठेवून २-३ मिनिटे भाजून घ्यावे.
  • नंतर दुसऱ्या बाजूने २-३ मिनिटे भाजून घ्यावे. केल्याचा 
  • भाजून झाल्यावर पानातून हलकेच सोडवावे.
  • गरम गरम पानगे साजूक तूप आणि दुधाबरोबर खायला द्यावेत.  

टीप: आम्ही एकदा तांदुळाच्या पीठाऐवजी गव्हाचे पीठ आणि चिमूटभर बेकिंग पावडर वापरून पानगे केले होते. छान झाले होते.

Puran Poli ~ Maharashtrian Sweet Stuffed Roti

Puran poli is a traditional sweet dish which is specially prepared on the occasion of Holi festival in Maharashtra. In fact it is also prepared during most of the auspicious occasions like Satyanarayan-pooja, Mahalakshmi-pooja, Jivati-pooja, Ganesh festival etc in every Maharashtrian home. 
Puran poli is nothing but sweet, soft, flaky and thin stuffed paratha. Puran poli is made by different different methods in Maharashtra.
My aai/mother makes the best Puran poli' in the whole world, I think so. My aai's puranpoli is too soft and just melts in mouth.
Here is my mom's Puran poli recipe.....




Ingredients:

For Outer Dough:
  • Maida (All purpose flour) - 250 gm
  • Turmeric powder - a pinch
  • Salt- a pinch
  • Refined Oil- ½ cup
  • Water - approx ¼ cup
For Sweet Filling/Puran:
  • Channa dal - 250 gm
  • Yellow Jaggery (Gud), grated - 250 gm (Put out 3 tbsp gud, use sugar* instead of gud. It enhance the taste.)
  • Sugar* - 3 tbsp 
  • Cardamom powder- ½ tsp
  • Nutmeg powder -¼ tsp
For Making Poli:
  • Rice flour - as required (If not available, use maida)
  • Pure ghee/Clarified butter- as required 

Method:

For Dough:

  • Sieve the maida first.
  • Combine maida, turmeric powder and salt in a bowl and mix well.
  • Add water gradually. Mix with hand by adding water  by spoon. Ensure you do not add too much water. (The dough should be not be stiff or soft, it should be sticky.)
  • Take some oil on your palm and make dough. Now pour oil over it and let the oil stay on the top. Leave the dough in the oil to rest for 3 to 4 hour.  

For Stuffing/Puran:
The dough is resting meanwhile make the Puran. You can make Puran on previous day and store in refrigerator in a air-tight container. When you are making puranpoli, just put out before 1 hour. I am giving here authentic method of Puran making. 
  • Wash the dal and soak in enough water for half an hour.
  • Add pinch of  turmeric powder and salt in the dal. Pressure cook the dal in cooker separator till 2 whistles came out. Cook the dal with just enough water to cover the dal. (You can cook this dal without cooker. But it takes about 40 to 50 minutes to cook) It shouldn't get over cooked and mashy like dal which is we used for aamati/varan. When you press the dal with your fingers, it should be slightly firm but completely cooked. 
  • When the dal is cooked, drain out excess water with the help of strainer. Don't throw this water, this is used to make another recipe 'Katachi Aamati'
  • Heat a large non-stick saucepan or a large heavy bottom wok, add the jaggery. When it starts melting, add cooked chana dal. Stir well.
  • Stir on a medium-low flame until the jaggery melts completely and incorporates into the dal. Stir continuously. 
  • Grind the dal and jaggery mixture still it is hot. Grind with the help of 'Puran Yantr' or Stone grinder/Pata-Varvanta. Grind into smooth dough. You can use food-processor also. (If puran contained extra moisture, spread it on clean cotton cloth. Cloth will absorb excess water.) See my aai's loving hands. 
  •  Add cardamom powder and nutmeg powder. Mix well and make 20 balls of equal size. Cover them and put it aside. 

For Making Puran Poli:
  • Now knead again maida dough till it absorbed almost that oil and become elastic and soft. 
  • Now clear up your counter space and set up your work area with a bowl of ghee, a bowl of rice flour to dust, your rolling pin and...roll up your sleeves! :)
  • Heat nonstick griddle/tava.
  • Take a small portion of dough. See the size of dough and filling. 
  • Using your hands made like small puri. Keep puran ball in center of this puri shaped dough. Deep your fingers in oil and cover the filling with the dough by stretching and by rotating the dough between your thumbs and fingers. Seal the edges and squeeze out excess dough from it.
  • Dust the rice flour on the board/polpat and press gently. Gently roll out each poli to about 6 inches rounds. Roll like chapati/paratha but only being extra careful. Roll evenly by all sides. Remove the extra flour with soft cloth. 
  • Place the puran poli on hot tava. Turn down to medium-low heat. Roast for few seconds and turn the side.
  • Pour little ghee and roast carefully and turn the side.
  • Pour little ghee again and with the spatula press one side slightly so that it puffs up well. It will not take more then 2 min to be ready. Remove from the tawa/griddle. 
  • Serve hot with lots of ghee over it and a bowl of milk or with meal.


वाढणी: १५ ते २० पोळ्या

साहित्य:
पुरणासाठी- 
  • चणाडाळ- २५० ग्रॅम
  • गुळ, किसुन- २५० ग्रॅम (यातील ३ टेबलस्पून गुळ काढून त्याऐवजी तेवढीच साखर* घालावी. चांगली चव येते.)
  • साखर*- ३ टेबलस्पून 
  • हळद- चिमुटभर
  • मीठ- चिमुटभर किंवा चवीनुसार
  • वेलची पूड-  १/२ टीस्पून
  • जायफळ पूड- १/४ टीस्पून
पोळीसाठी-
  • मैदा- २५० ग्रॅम
  • हळद- चिमुटभर
  • मीठ- चिमुटभर 
  • पाणी- अंदाजे  १/४  कप
  • तेल-१/२  कप
  • तांदुळाचे पीठ- जरुरीनुसार (नसेल तर मैदाच वापरा. पण तांदूळ पीठाने पोळ्या सरसर लाटता येतात. ) 
  • साजुक तूप- जरुरीनुसार 

कृती:
पुरणासाठी- 
  • डाळ स्वच्छ धुवून पुरेश्या पाण्यात अर्धा तास भिजवावी. 
  • चिमुटभर हळद व मीठ टाकुन कुकरला शिजवुन घ्या. कुकरच्या भांड्यात ठेवा, म्हणजे खालून करपायची भीती नाही. बाहेर शिजवतो त्यापेक्षा डाळीत पाणी कमी ठेवावे. २ शिट्ट्या घ्याव्या. (बाहेर शिजायला अंदाजे ४०-५० मिनिटे लागतात. सारखे लक्ष ठेवावे लागते.)  डाळ व्यवस्थित शिजली पाहिजे अन्यथा पुन्हा शिजवावी पण वरणासाठी करतो तसा गाळ व्हायला नको. अख्खीच दिसली पाहिजे पण बोटाने दाबल्यास फुसकन तुटली पाहिजे. 
  • डाळ शिजल्यावर सर्व पाणी गाळुन काढून बाजूला ठेवावे. (हेच पाणी वापरून कटाची आमटी करतात.) 
  • जाड बुडाच्या भांड्यात गुळ टाकुन थोडा विरघळला की शिजवलेली डाळ टाकावी. 
  • गुळ विरघळेपर्यंत चांगली परतून घ्यावी. मिश्रण एकजीव झाले की गरम असतानाच पुरण यंत्रावर किंवा पाट्यावर वाटावे. फुड-प्रोसेसरवर पण वाटता येते.   (वाटून झाल्यावर पुरण फारच सैल वाटत असेल तर स्वच्छ व सुती कपड्यावर पसरावे. कपडा पाणी शोषून घेतो व पुरण कोरडे होते.)
  • पुरण वाटून झाल्यावर वेलची पूड व जायफळ पूड टाकावी आणि पुन्हा छान मळून घ्यावे.  
पोळीसाठी-
  • मैदा चाळून घ्यावा. साधारण त्यातील १/४ कप मैदा बाजूला काढून ठेवा. 
  • मैद्यात चिमुटभर हळद व मीठ टाकून मिक्स करा. 
  • आता मैद्यात हाताने मिक्स करत करत हळूहळू पाणी घालत घ्या. अगदी चमच्याने घातलेत तरी चालेल. अंदाजे १/४ कप म्हणजे साधारण अर्धी वाटी पाणी लागेल. खूप चिकट होतो. (म्हणूनच थोडा मैदा बाजूला काढून ठेवावा, जर भिजवलेले पीठ खूपच सैल वाटले तर वरून मैदा घालता येतो.) 
  • हाताला थोडेसे तेल लावून त्याचा गोळा करून साधारण १/२ कप म्हणजे साधारण एक वाटी तेलात ३ ते ४ तास भिजत ठेवावा. एवढ्या वेळात मैदा त्यातील तेल शोषून घेतो. 
  • पोळ्या करायला घेताना हा मैद्याचा गोळा परातीत घेवून पुन्हा चांगला मळून घ्या. थोडेफार जे तेल उरलेले असते ते पण तो मैद्याचा गोळा शोषून घेतो. अगदी त्या गोळ्याला तन्यता येईपर्यंत मळायचे आहे. 
  • पुराणाचे समान आकाराचे गोळे करून घ्यावेत. याचे २० गोळे होतात. 
  • छोट्या लिंबाएवढ्या आकाराचा मैद्याचा गोळा घेऊन हातानेच दाबून पुरीसारखा आकार करून त्यात पुरणाचा गोळा भरून तो सर्व बाजुंनी सारख्या प्रमाणात ताणत ताणत नेवुन त्याची टोक जुळवून टाकावीत. वर आलेले जास्तीचे कणिक पिळुन काढून टाकावे.  
  • पोळपाटावर तांदुळाचे पीठ भुरभुरून हलक्या हाताने पुरणपोळी लाटावी. लाटताना मध्यभागीच जोर देऊ नये, नाहीतर पुरण मध्येच राहत आणि नुसती मैदाची पोळी बाजूनी वेगळी होते. कडा जाड लाटू नये, चिवट लागतात. 
  • तवा व्यवस्थित गरम करून घ्या. शक्यतो नॉन-स्टिक तवाच वापरा, पोळी चिकटण्याची शक्यता कमी असते. 
  • पोळीवरील जास्तीचे पीठ स्वच्छ रुमालाने हलकेच झटका. हलक्या हाताने पोळी उचलून तव्यावर टाका. मध्यम ते मंद आचेवरच भाजा, हलक्या हाताने उलटा. भाजताना दोन्ही बाजूंनी तूप लावा. 
  • गरमागरम पोळीवर साजुक तुपाची यथेच्छ धार सोडा आणि दुधासोबत किंवा कटाच्या आमटीसोबत वाढा. कोकणात काही वेळा गुळवणी (गोड नारळाचे दुध) सोबत पुरणपोळी वाढतात. देशावर काही ठिकाणी बासुंदी सोबत तर काही ठिकाणी आमरसासोबत पुरणपोळी वाढतात.  
  • डब्यात भरताना पोळ्या थंड झाल्यावरच भरा.   

टिपा :
  • पुरण आदल्या दिवशी वाटून फ्रीजमध्ये ठेवले तर आयत्या वेळेला घाई होत नाही. पण पोळ्या करायच्या आधी १ तास आधी बाहेर काढून ठेवावे.  
  • सकाळी लवकरच पहिले मैदा भिजवून तेलात ठेवून द्यावा. म्हणजे दुपारी पोळी करायला घेईपर्यंत त्याने सर्व तेल शोषुन तो छान मुलायम झालेला असतो. 
  • पिवळा गुळ वापरा.  नैसर्गिक केमिकल विरहित गुळ नको, नाहीतर पोळ्या काळ्या दिसतील.

Moong Dal Kheer/Payasam ~ Green Gram Pudding With Coconut Milk

Delicious Moong Dal Kheer/Payasam from Goa, Karvar and Kerala. This is a one of the Onam Special Kheer.
My Karavari neighbour taught me this delicacy and my family love it..... 



Ingredients:

  • Split green gram (moong dal)- 1 cup
  • Jaggery, grated- ½ cup
  • Coconut milk - 1 cup
  • Cardamom powder- 1 tsp 
  • Clarified butter (pure ghee) - 2 tbsp
  • Cashews nuts- 6
  • Almonds- 6
  • Salt - 1 small pinch

Method:
  • Heat 1 tbsp ghee in a non-stick wok/kadhai or heavy bottom pan, roast almonds and cashew nuts to golden. Remove them to plate. Crush them coarsely.
  • Heat 1 tbsp ghee in the same pan, add moong dal and roast till it turns light red colour and releases nice aroma.
  • Cook the dal with ½ cup of water till it becomes soft. Dal should be cooked well thus it would be mash completely. (You can pressure cook moong dal for 3 whistles.)
  • Once dal will cooked well, mash the dal with ravi/hand blender.
  • Add the melted jaggery, salt and some water to mashed dal and stir well.
  • Boil on low flame with stirring.
  • When dal starts boiling, add the coconut milk and stir well for 5 minutes.
  • Add cardamom powder and the roasted and crushed nuts. Stir well and remove from the gas.
  • Serve hot.

Narali Bhat ~ Sweet Coconut Rice

Narali Bhat is specially made on Narali Pournima. Narali Pournima and Raksha-bandhan falls on same day. Narali Pournima is mostly celebrated in Maharashtra. Narali Pournima is celebrated in large scale in Koli community (Fishermen).
On narali pournima, people do sea-worship by throwing coconuts into the sea in Konkan. We prepare some sweet goodies from coconut. We offer narali bhat to God. Narali bhat is heavenly blend of rice, coconut and jaggery.

Ingredients:
  • Rice (Basmati tukada or Ambe Mohar)- 1 cup
  • Clarified butter/Pure Ghee- 3 to 4 tbsp
  • Jaggery, grated- ¾ cup to 1 cup 
  • Clove- 4
  • Fresh coconut, scrapped- 2 cups
  • Cardamom powder - ½ tsp
  • Nutmeg powder- ½ tsp
  • Salt - a pinch  (¼ tsp)
  • Cashew nuts, sliced- ¼ cup
  • Raisins/Kishmish (golden or black)- 2 tbsp  

Method:
  • Wash and strain the rice. Keep in strainer for 15 min.
  • Boil 2 ¼ cups of water.
  • Heat 2 tbsp ghee in a casserole. (You can use pressure pan.)
  • Fry the cloves in the ghee for few seconds. Add rice and fry lightly for 2 minutes on med heat.
  • Add hot water to the rice. Add salt also. Cover and cook the rice. (or pressure cook.)
  • Meanwhile combine scrapped coconut, jaggery, cardamom & nutmeg powder. Mix and mash lightly with hand.
  • Once rice is cooked nicely, put it into a big plate and spread evenly.
  • While the rice is still hot, add coconut mixture into the rice. Mix very gently. Otherwise, rice grains may get broke. 
  • Heat 2 tbsp ghee in a non-stick or heavy bottom deep & large pan/wok.
  • Add and fry cashew nuts in the ghee till they turns golden brown. Fry slightly kishmish. 
  • Immediately add this rice and give nice stir gently.
  • Keep tava under pan/wok. This prevents rice from burning.
  • Cover with a lid. Cook for 10 to 15 minutes on low heat. Stir occasionally.
  • While cooking rice, jaggery melts and rice become thin previously.
  • When rice gets thick, switch off the gas. Do not reduce its whole moisture. Soft rice tastes better.
  •  Keep covered for 15 minutes.
  • Serve hot or on room temperature. 

Tips:
  • Here I used natural/organic jaggery, thus rice got dark brown colour. But you may use regular yellow jaggery.
  • Adjust the jaggery ¾ cup to 1 cup, how sweet you like.
  • Rice should be cooked completely. Rice can not cook after adding jaggery. 
  • Do not overcook, coconut rice become hard. Because jaggery become more thick and stiff after heating.
  • You can use sugar instead of jaggery. Or you can use half quantity of sugar and half quantity of jaggery.  


Authentic Method:

Ingredients:
  • Rice (Basmati tukada or Ambe Mohar)- 1 cup
  • Clarified butter/Pure Ghee- 2 tbsp
  • Jaggery, grated- ¾ to 1 cup 
  • Clove- 4
  • Fresh coconut, scrapped- 2 cups ~from 1 large coconut (Read more in notes.)
  • Cardamom powder - ½ tsp
  • Nutmeg powder- ½ tsp
  • Saffron - a pinch (optional)
  • Salt - a pinch  (¼ tsp)
  • Cashew nuts, sliced- ¼ cup
  • Raisins/Kishmish (golden or black)- 2 tbsp  


Method:
  • Wash and strain the rice. Keep in strainer for ½ to 1 hour.
  • Scrap the coconut. Take only white part. Do not take bottom brown part.
  • Blend the scrapped coconut with 1 cup of warm water. Squeeze out the coconut milk with the help of a fine strainer. You will get approx 1 ½ cup of thick coconut milk. This is first extract. 
  • Blend the scrapped coconut with 1 cup of warm water. Repeat this process. Now you will get approx 1 cup coconut milk. This is second extract. 
  • Heat the ghee in a non-stick or heavy bottom deep & large pan/casserole. Fry the cloves in the ghee for few seconds.
  • Add and fry cashew nuts in the ghee till they turns golden brown.
  • Add rice and fry lightly for 2 minutes on med heat.
  • Meanwhile heat second extract of coconut milk.
  • Pour this hot coconut milk into the pan. Add saffron, salt and mix well. Cover and cook the rice for a minute. 
  • Now pour thick coconut milk into the pan and cook the rice completely. You can add more water if required. 
  • Once the rice is completely cooked, add raisins, jaggery, cardamom & nutmeg powder. Mix very gently and well, otherwise rice grains may get broke. 
  • While cooking rice, jaggery melts and rice become thin previously .
  • Cover and cook for 5 minutes on low heat. Stir occasionally.
  • When rice gets thick, switch off the gas. Do not reduce its whole moisture. Soft rice tastes better.
  • Keep covered for 15 minutes.
  • Serve hot or on room temperature. 

Tips:
  • One thing keep in mind: You have to use 2 ¼ cups liquid (i.e. coconut milk+water) for 1 cup of rice.
  • You can use readymade coconut milk.
  • Here I used natural/organic jaggery, thus rice got dark brown colour. But you may use regular yellow jaggery.

Fanasache Umbar ~ Ripe Jackfruit Sweet Fritters

Fanasache Umbar is popular dish using ripe jackfruit in Konkan belt. It is also known as Fonsa Mulika in south Konkan.
The appearance of this dish is not too good but believe me, it tastes heavenly.




Ingredients:
  • Ripe Jackfruit pods/gare, chopped- 2 cups
  • Jaggery- ½  cup 
  • Rawa/Sooji/ Semolina- 1 cup
  • Fresh coconut scrapped- ¼  to ½  cup
  • Black or white sesame seeds- 1 tbsp (optional)
  • Cardamom powder- ¼ tsp
  • Nutmeg powder- ½ tsp
  • Salt- a pinch
  • Baking soda- a pinch (optional)
  • Oil for deep frying- as required

Method:
  • Dry roast semolina about 5 minutes to remove it's rawness. 
  • Discard the seeds and chop the clean jackfruit pods. 
  • Grind chopped jackfruit along with jaggery into smooth paste without adding water. 
  • Transfer this paste into a mixing bowl. Then add semolina cardamom powder, nutmeg powder, scrapped coconut, black sesame seeds, baking soda and salt. 
  • Mix well and allow the mixture to rest for 20 to 30 minutes. (Test the mixture for sweetness)
  • Heat the oil in a kadhai. Turn flame to medium heat once oil is hot. Drop small part of the mixture one by one. Deep fry them on low to medium heat till colour turns deep golden brown. Be careful not to over crowd in the wok. Drain on a paper towel.
  • Serve them warm or at room temperature. 

Notes:

  • Jackfruit should be very sweet. Adjust quantity of jaggery according to sweetness of jackfruit.
  • Use semolina which is medium coarse (jada rawa). This gives a crispiness to the fritters.
  • Fanasache Umbar is made by two methods. Using rawa or wheat flour. I like to use rawa.
  • You can make appe or pancake/ghavana/pola from this mixture. But you have to add some water in this mixture.
  • This umbar/fritter is made with ripe banana also.

Variation: 
We make puries/gharage with above mentioned all ingredients (except rawa and baking soda) and wheat flour as needed. These puries/gharage are made on no-moon in Hindu month Ashadh (Ashadh Aamavas/Divyachi Aamavasya) in my native for Naivedyam/bhog.





फणसाचे उंबर 

साहित्य: 
  • फणसाचे गरे, आठळ्या काढुन आणि चिरून- २ कप 
  • गुळ- १/२ कप 
  • रवा- १ कप 
  • ओले खोबरे, खोवलेले- १/४ ते १/२ कप 
  • काळे किंवा पांढरे तीळ- १ टेबलस्पून 
  • वेलची पूड- १/४ टीस्पून 
  • जायफळ पूड- १/२ टीस्पून 
  • मीठ- चिमूटभर 
  • खायचा सोडा- चिमूटभर 
  • तळण्यासाठी तेल- जरुरीनुसार 

कृती:
  • रवा थोडासा मंद आचेवर भाजून घ्या, त्यामुळे त्याचा कच्चटपणा निघून जाईल. 
  • गरे आणि गूळ मिक्सरमध्ये एकत्रित पाणी न घालता वाटून घ्या. अगदी पेस्ट झाली पाहिजे. 
  • ही फणसाची पेस्ट एका बाउलमध्ये काढून घ्या. त्यात रवा, वेलची व जायफळ पूड, खायचा सोडा, मीठ टाकून व्यवस्थित मिक्स करा. 
  • हे मिश्रण २० ते ३० मिनिटे तसेच ठेवा. किंचित चाखून बघा, गोड पुरेसे आहे ना यासाठी. नसेल तर जरासा गूळ कुस्करून घाला. 
  • कढईत तेल गरम करा. तेल व्यवथित तापले की आच कमी करून मध्यम ते मंद आचेवर वरील मिश्रणाचे छोटे छोटे गोळे हाताने किंवा चमच्याने तेलात सोडा व खरपूस टाळून घ्या. (गुळामुळे गडद तपकिरी रंग येतो)

टिपा: 
  • या मिश्रणाचे अप्पे सुद्धा करता येतात. यासाठी मिश्रण थोडसं पाणी टाकून सैल करा व नेहमीप्रमाणे अप्पे करा. 
  • शक्यतो यासाठी बारीक रवा वापरु नये. 
  • हे उंबर गव्हाचे पीठ वापरून देखील करतात, पण ते तितकेसे खुसखुशीत लागत नाहीत. 
  • फणसाऐवजी पिकलेल्या केळ्याचा वापर करून देखील उंबर बनवतात. 
  • फणसाच्या मिश्रणात रव्याऐवजी त्यात मावेल एवढे गव्हाचे पीठ घालून पुरी प्रमाणे घट्ट कणिक मळावे व त्याच्या पुऱ्या बनवाव्या. आमच्या गावी आषाढी/दीप आमावस्येला फणसाच्या पुऱ्या व तांदळाची खीर याचा नैवेद्य देवाला दाखवतात.

Aamras ~ Indian Mango Smoothie

Aamras is a very popular, delicious, quick and easy Indian dessert. It is just like mango smoothie. It is a good accompaniment for puris and roti/chapati.



Ingredients

  • Ripe Mangoes (preferably Alphonso or Payari) - 4
  • Sugar - 1 tbsp
  • Milk - ¼ cup
  • Cardamom powder - ½ teaspoon 
  • Nutmeg powder- a pinch
  • Pure ghee- 2 tsp (optional)

Method:
  •  Wash and press the mangoes from all sides. Squeeze the mango pulp and discard the seeds. (or cut the mangoes and put out the pulp.)
  • Combine mango pulp, sugar, milk, nutmeg powder and cardamom powder. Blend together into smooth paste.
  • Refrigerate it and let it cool for some time. 
  • Serve with puris or rotis.

Tips: 
  • Adjust the milk according to consistency required and sugar according to sweet taste required.
  • Actually I don't like using ghee in aamras according to taste. But my hubby like it and gives encouraged to use this. Because according to Ayurveda, ghee is helpful in digestion of mango.
